Today is Daylight Appreciation Day which is one of the oldest and most universal celebrations on earth. We can continue the tradition by taking time to celebrate something much bigger and brighter than ourselves!
Appropriately timed around the summer solstice, Daylight Appreciation Day is a perfect excuse for staying up late. Outside is the only place to really appreciate the sunset. In many countries, some people stay up until morning, partying through the shortest of nights.
Whatever you have planned, enjoy the feel good effect of daylight, the one thing that brings out the ray of sunshine in all of us.

I do love to watch the sun set. It’s when I take time to count my blessings every day. The sun rising every morning reminds me to be thankful for another day.
Daylight hours do make my days brighter in more ways than one. There are many healing benefits to sunshine. The sun's rays create Vitamin D in the body, which is essential for many functions such as bone health. Vitamin D supports the immune system and protects against dementia and brain aging. It is also essential for decreasing symptoms of asthma
and strengthens teeth.
The sun's light kills bad bacteria. Sunlight has a beneficial effect on skin disorders, such as psoriasis, acne, eczema and fungal infections of the skin. The sun's rays lower blood pressure. Even a single exposure significantly lowers blood pressure in individuals with high blood pressure. No wonder fresh air and sunshine is so good for you.
Always remember that exposure to the sun should be done slowly. If you are not used to the sun, then your skin will be more sensitive to it. Avoid sunburn by building up your tolerance slowly.
This week will be mostly in the 80’s they say with a chance of rain on or about Thursday. We will be needing it for sure.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Peaches and Cream Day!
It is possible that I’ve share this recipe before because I do make a lot of Impossible Pies. They are quick and easy.
Impossible Peaches and Cream Pie
3 cans, 16 ounce size, peaches, drained
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup whipping cream
2 eggs
3/4 cup sugar
2/3 cup Bisquick
sweetened whipped cream
3 1/2 cup sliced fresh peaches may be substituted.
For Streusel
Cut butter into Bisquick and sugar until crumbly; stir in almonds if desired.
Heat oven to 375 degrees F. Grease a 10 inch pie plate.
Pat peach slices dry; place in plate. Sprinkle with cinnamon and nutmeg; toss. Spread evenly in plate.
Beat remaining ingredients except Streusel and sweetened whipped cream until smooth for 15 seconds in blender on high. Pour into plate. Sprinkle with Streusel.
Bake until knife inserted in center comes out clean, 40 to 45 minutes.
Top each serving with whipped cream.

I love summer! And I love the sunshine! Today is also National Selfie Day. My granddaughter will be taking lots! I love how you are counting your blessings. I need to spend more time doing that. And less time grumbling!!
How delicious with peaches and cream! I'm not sure I could stay up all night and party on this short night, but it would be fun. We aren't any place to really see the sun set but sometimes get a pretty color to the sky from it. Most of the houses here in Phoenix are built North/South rather than East/West because of the intense summer heat.
