Today is Paul Bunyan Day! Paul Bunyan is one of the best known heroes in American folklore. This legendary lumberjack, and his faithful companion Babe the Blue Ox, starred in many of the tall tales told in the Midwest during the 1800s. According to the stories, Bunyan was a huge man with an amazing amount of physical strength. He single handedly founded the logging industry, cut down whole forests in North Dakota, created Lake Superior with his bare hands, and even trained carpenter ants to help him with his tasks!
Paul Bunyan is mentioned in more than 1,000 books and has become one of the most widespread icons in American culture.

I do love folklore and like many kids grew up listening to stories about heroes like Paul Bunyan. I wonder if the children today have even heard of him.
Folklore is so much a part of our everyday life that we don't always stop to think about it. Family traditions, holidays, special sayings, and foods, all these are part of folklore.
Folklore is often defined as knowledge or forms of expression that are passed on from one person to the next by word of mouth or the oral tradition. These different kinds of expressions include songs, rhymes, folktales, myths, jokes, and proverbs.
Folktales and fairytales are part of life and can make our imagination soar.
It takes little imagination though for me to realize we are almost to the end of June already. I know that the days fly by faster than ever when the weather gets nice outside. These beautiful days will go quickly so try to enjoy them.

There is a food holiday to celebrate every day of the year!
Today is National Tapioca Day
Tapioca comes in many names and shapes. Native to Brazil, this starchy treat has circled the globe and is eaten by kids and adults of many nationalities.
Easy Slow Cooker Tapioca
6 cups milk
3/4 cup sugar
3/4 cup tapioca
1 egg
2 teaspoons vanilla extract
Pour milk into slow cooker and turn onto HIGH. Add sugar and stir until dissolved. Add tapioca, stir, and cover with lid. Cook for 2 to 3 hours until tapioca is tender. Pearls should be translucent and clear when done.
In a small bowl, beat egg and vanilla with a whisk. Add 1 cup of the hot cooked milk/tapioca to this egg mixture, stirring well. Then pour this mixture into the slow cooker and stir. Cover with lid and cook for a final 20 minutes. Remove lid, pour pudding into serving bowl and chill.

Who can forget about Paul Bunyan and Babe. A wonderful tale was told about them :) I haven't had tapioca pudding in a bit, but always a favorite when I did :)

I just asked my 16 year old granddaughter. She had no idea what I was talking about. When I said "lumberjack" she had a faint memory. I loved this story as a child. I do NOT like tapioca pudding at all. Yucky!! Have a beautiful day today!!
