Today is World Environment Day which aims to raise awareness of the importance of respecting and doing your bit for the environment. World Environment Day was established by the United Nations General Assembly in 1972 to mark the opening of the Stockholm Conference on the Human Environment.

We make the world we live in and shape our own environment.

Our environment is very important to all of us and it’s important we all do our best to make it the best we can. We can be mindful about recycling, mindful about water usage, mindful of what we eat; and use environmentally friendly products in our homes. Every action, large or small, counts.
Today is also the birth date of one of my grandson’s whom I fondly call our Pumpkin’. He passed away several years ago now when he was but 2 years old. Even though he was with us for a short time, he will always be remembered. His life, like all life, will be celebrated today. My prayers are with DS#3 and his wife today and with all parents who have lost a child.
June is a wonderful month full of family fun and beautiful days and we should all try to enjoy them to the fullest. We never know just how long we will have our loved ones with us. Appreciate the time you have together.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
June 5th is National Gingerbread Day
Gingerbread always reminds me of Christmas so it seems strange for me to celebrate this holiday in June. But gingerbread can also come in the form of cookies which are often cut into shapes like gingerbread men and that reminds me of the Ginger Snap cookies that the boys used to enjoy. They always seemed to hit the spot for a quick and energizing snack in the summertime.
Ginger Snap Cookies
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 tablespoon Ginger
1 teaspoon Cinnamon
3/4 cup shortening
1 cup sugar
1/4 cup molasses
1 egg
Additional sugar, for rolling
Preheat oven to 350°F. Mix flour, baking soda, salt and spices in medium bowl. Set aside. Beat shortening and sugar in large bowl with electric mixer on medium speed until light and fluffy. Beat in molasses and egg. Gradually stir in flour mixture until well mixed.
Shape dough into 1 inch balls. Roll in additional sugar to coat. Place 2 inches apart on ungreased baking sheets. Bake 12 minutes. Cool on baking sheets 1 minute. Remove to wire racks; cool completely. Store in airtight container.
Makes 4 dozen

Always sad for parents and families to lose a child so young, I do remember you writing about it when your family lost little Pumpkin.
I do agree with doing what we can to help take care of our environment, we do a lot recycling here.

When the concept of recycling first took hold, I resisted ... oh ya, I did. Though I still resist 'dumpster diving' (like a certain co-worker), it's become second nature. Even hubby's learning to differentiate.

I haven't been on in awhile, Ma so didn't know you lost a grandson. I am
so very sorry to hear that.
