Today is Forgiveness Day which is a time to forgive and to be forgiven. The world will be a better place for this day.
Forgiving is a relieving process and not only on Forgiveness Day everyone should do that from time to time.

Studies show that people who forgive are happier and healthier than those who hold resentments. I’ve known a lot of people that held on to resentment and never forgave mistakes or let go of the grudges they held. It’s a sad sad thing . I’ve learned to forgive and although it wasn’t easy at all, it does bring peace, not only to the one you forgive, but to yourself.
It’s supposed to be a hot sunny day in our party of the world with temps in the 90’s. On days like this it sometimes seems that the sun is very unforgiving. It’s relentless heat takes it’s toll. Remember to keep hydrated.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Chocolate Pudding Day!
More than not I use instant pudding mix these days which requires no cooking but if you’d like to make it the old fashioned way, here’s a recipe to follow. Pudding is a favorite summertime dessert!
Quick Creamy Chocolate Pudding Recipe
2/3 cup sugar
1/4 cup Cocoa
3 tablespoons cornstarch
1/4 teaspoon salt
2 1/4 cups milk
2 tablespoons butter or margarine
1 teaspoon vanilla extract
Whipped topping, optional
Stir together sugar, cocoa, cornstarch and salt in medium saucepan; gradually stir in milk. Cook over medium heat, stirring constantly, until mixture boils; boil and stir 1 minute. Remove from heat; stir in butter and vanilla. Pour into individual dessert dishes. To avoid a skin from forming on top, press plastic wrap directly onto surface; serve warm or refrigerate at least 2 hours. Pudding will thicken as it cools. Garnish with whipped topping, if desired. Makes 4 servings.

Forgiving is one of the hardest things to do. But we must do it!! For ourselves, not for those we are forgiving!!
Forgiving is necessary if we want not to build up bitterness. Yum on the chocolate pudding!

I know, I know ... but it's SO dang hard, Ma! 'Still working on that ...
I've few memories of summers spent on my grandparents' farm in Minnesota, but one that's everlasting was getting to prepare stove-top chocolate pudding all by myself. Made me feel so grown up!
