Today is Log Cabin Day which brings us back to a quieter, simpler, more rugged era. A couple hundred years ago, life was far more rugged. Americans moving West found an untouched wilderness, filled with pristine forests. They built their homes out of logs. These log cabins were solid, long lasting, and served them well.
Life was rustic and simple. Heat was provided by an open fireplace, where they also cooked their meals. There was no electricity.
Log Cabin Day celebrates what was then the ‘Modern' home in America, and all of the lifestyle that accompanied it. Today is a day to appreciate the history and significance of log cabins.

When we think about what we have in our homes today we have to admire those people that lived in log cabins with any modern conveniences. They made do with what they had available to them and managed to live fulfilling lives. Proof positive that happiness is not found in material things.
Today’s pictures are more of the beautiful sights at the nature park we visited this past Thursday. I really did take a lot of pictures. I’ll be sharing more in the days to come.

There is a food holiday to celebrate every day of the year!
It’s National Strawberry Parfait Day
A parfait is usually a layered dessert served in a glass similarly named. The layers can be custard, ice cream, or yogurt, followed by layers of fruits or fruit purees. Fresh strawberries make this a perfect summer dessert.
Strawberry-Chocolate Mousse Parfait
1 pint basket ripe strawberries, washed, stemmed and halved
3 tablespoons orange juice concentrate, thawed
3 tablespoons water
2 1/2 tablespoons sugar, divided
1 cup semisweet chocolate pieces
1 1/2 cup whipping cream, divided
1/2 teaspoon vanilla extract
Mint sprigs, for garnish, optional
In a bowl, toss strawberries and orange juice; cover and refrigerate.
To make chocolate mousse: In a small saucepan, mix water with 2 tablespoons of the sugar. Bring to boil; reduce heat and simmer 1 minute. Place chocolate pieces in container of electric blender. Immediately add hot sugar mixture. Blend until chocolate is melted and smooth.
In medium bowl, whip 3/4 cup of the cream to form stiff peaks. With rubber spatula, fold chocolate into cream to blend thoroughly. Cover and refrigerate until firm, at least 2 hours or up to 3 days.
Just before serving, whip the remaining cream to form soft peaks. Beat in the remaining sugar and the vanilla.
In 10 to 12 ounce parfait glasses or in dessert bowls, layer mousse, whipped cream and strawberries, dividing equally. Garnish with mint sprigs.

I like that recipe for the parfait, refreshing for a hot summer day. I don't think I would last long in a log cabin, but I admire those that did.

I'm honestly enchanted with the idea of residing in a log house; but in reality, I doubt I'm strong enough (mentally) to endure.
My DH -- a big fan of strawberries -- is understandably stressed about an upcoming procedure, so I may just pick up some fresh berries and custard when I go to the store later this morning and make him a parfait. Come to think of it, we've a few of those glasses that have never been used!
