Today is National Comfort Food Day. I'm ready to celebrate. Comfort foods are my favorite foods to eat. I never tired of warming soups, hearty pastas, and rich desserts. Enjoy your favorite comfort food today !

THOUGHT FOR TODAY
O tidings of comfort and joy...
I was surprised to learned that although the concept has been around for ages, the term comfort food wasn't officially added to the American dictionary until 1977. One list of popular comfort foods that I saw had Chicken Pot Pie on it and since I had frozen pie crust in my freezer, I decided to make a Chicken Pot pie this past Sunday and here is the recipe I used.
1/3 cup butter or margarine
1/3 cup chopped onion
1/3 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 3/4 cups chicken broth
1/2 cup milk
2 1/2 cups shredded cooked chicken or turkey
2 cups frozen mixed vegetables, thawed
Already prepared pie crust enough for 2, use one for top and one for bottom of pot pie
Heat oven to 425°F. Roll out one ball of dough on lightly floured surface into 11 inch circle. Fold into quarters. Place dough into ungreased 9 inch pie plate; unfold dough, pressing firmly against bottom and sides. Trim crust to 1/2 inch from edge of pan; set aside.
In 2 quart saucepan, melt butter over medium heat. Add onion; cook 2 minutes, stirring frequently, until tender. Stir in flour, salt and pepper until well blended. Gradually stir in broth and milk, cooking and stirring until bubbly and thickened. Stir in chicken and mixed vegetables. Remove from heat. Spoon into crust lined pie plate.
Roll out refrigerated ball of dough on lightly floured surface into 11 inch circle. Gently fold dough into quarters. Place dough over filling; unfold. Trim, seal and crimp or flute edges.
Bake 30 to 40 minutes or until crust is golden brown. During last 15 to 20 minutes of baking, cover edge of crust with strips of foil to prevent excessive browning. Let stand 5 minutes before serving. Tip: shiny pie pans will result in a soggy crust.
I’m very glad I had leftover chicken and the crust already made up. It turned out better than any store bought pot pie I ever had. The good news is that I still have leftover chicken in the freezer. I plan on making some Chicken Fried Rice with one container. I’ll share that recipe later on when I find out how a new recipe I have turns out. I also had to put some of that pot pie in the freezer to eat later it was way too big for me to eat it all. Make sure you use a deep dish pie plate if your make it.
Leftovers are wonderful !

I liked some of the ideas for the themed holiday parties, might have to host one next year. Yum on comfort foods, especially the pot pie, definitely will make that soon.

Funny, I took the day off work yesterday ... DH and I were sitting in our fav Mexican food eatery and I had a pop-up on my phone that it was National Comfort Food Day. Wheeeeeeeeee!
(PS - I didn't comment on today's post St. Nick's day, on account December 6 marks a sad anniversary in my life when my daddy passed suddenly 33 years ago.)
