On November 8th, it's your chance to cook something a bit different because it's Cook Something Bold and Pungent Day! Don't let the words bold and pungent intimidate you. There's varying degrees of each from the mild end of the spectrum to the incredibly strong. Regardless of your preference, there are a variety of ways to celebrate the day. You can learn new recipes, discover new spices, and taste foods that could become your new favorites.
What's bold and pungent to one person might be just another dinner to someone else, so follow your own instincts.

THOUGHT FOR TODAY
When I think of cooking something pungent, I think of garlic and one of my favorite ways to use garlic is in a pork roast. To me roast pork wouldn’t be complete with out the taste of garlic in it.
Sauerkraut is another pungent food and I found this recipe that might just fulfill the requirement of cooking something bold and pungent so I’ll be trying it out soon.
Cheesy Tater Tot and Bratwurst Casserole is a combination of sauerkraut, bratwurst, and crispy tater tots fused together with a creamy cheese sauce, then piled high with more melted cheese on top.
1 package (1 1/4 lbs.) uncooked bratwursts
3 cups chicken broth
2 tbsp butter
1 (16oz) can sauerkraut, rinsed and drained
1 (10oz) can condensed cheddar cheese soup, undiluted
1/2 cup milk
1 package (32oz) frozen Tater Tots
2 cups shredded cheddar cheese
1/4 cup chopped green onions
In a large saucepan combine the chicken broth and bratwursts, bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes, or until the bratwursts are cooked through. Drain and discard chicken broth. Place brats on a cutting board and cut into 1/4 inch pieces.
Pre-heat oven to 450 degrees F.
Place the saucepan back on the stove and brown the bratwursts in the butter over medium high heat. Drain on paper towels.
Spoon the drained sauerkraut into a greased 9x13" casserole dish. Top with the bratwursts. In a bowl, whisk together the cheddar cheese soup and milk until smooth. Pour over the brats.
Top with the tater tots. Bake for 20-25 minutes or until the potatoes are lightly browned and crisp. Sprinkle with the cheese and onions, bake for an additional 5 minutes or until the cheese is melted. Enjoy!
Today’s pictures are of our first snowfall last November. They keep throwing out that word SNOW in our long range forecasts, but so far we have had nothing but rain. I am so not ready for snow.

PRAYER REQUESTS
1. DDIL#4 wrote asking prayers for her brother and the family as his FIL passed away. Her brother’s FIL was the one I ask prayers for the other day that was in ICU with kidney failure.
Eternal rest, grant unto him O Lord
and let perpetual light shine upon him
May he rest in peace. Amen
May our dear Lord be with this family at this time of sorrow and loss.
2. DS#6 has also asked for prayers for a good friend of theirs that was in a bad car accident. Their friend has a broken wrist and a broken leg and will go in for surgery this coming Monday. I pray the surgery goes well and that she has a speedy recovery.
46 DAYS UNTIL CHRISTMAS
Smart tips like these can make it easier to address, write and send Christmas cards.
Involve the whole family when signing and addressing Christmas cards. Many hands make light work and ease the writers’ cramp.
Penning three or four greetings every day or so yields a livelier correspondence and is a lot easier on the hands than signing a hundred cards in a single frenzied sitting.
Use technology to simplify seasonal greetings. Use a computer to address the cards or write a Christmas letter on inkjet letterhead.
COUNTING MY GIFTS
I have counted at least 3 things every day that I'm thankful for 2 years and have now reached over 2000 gifts. On my way now to 3000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.
2201. for the bold and pungent flavor of garlic
2202. for finding one more sled to complete the 7 that I’m painting for my children this year. For some strange reason I was missing one.
2203. for bright lights on dark days. I surely do miss the sunshine.

While it might not be pungent, we are trying something new today for dinner with making fish for tacos, so maybe I'll have hubby add some garlic to it :)

That casserole sounds yummy! Now, I'm wondering if hubby can't adapt it to the slow cooker. (Because I don't cook - LOL!)
We're still trying not to use the oven to help keep the air conditioning bill to a minimum.
Thank you for including the prayer requests here, I will pray for them. So many people going through so many things, God be with them.
