It’s National Sugar Cookie Day! Today, we honor a cookie that is simple and straightforward, but totally delicious. Traditional sugar cookie recipes call for just six ingredients: sugar, flour, butter, eggs, vanilla, and baking powder.
Although sugar cookies by themselves can be quite plain, they are incredibly versatile. Use cookie cutters to create shaped sugar cookies, and top them with frosting or sprinkles. You can also make cookie sandwiches with two sugar cookies and fillings like marshmallow, melted chocolate, or jam.
To celebrate National Sugar Cookie Day, make a batch of homemade sugar cookies to share with friends and coworkers. Provide a variety of interesting decorations and let everyone personalize their bite sized dessert!

I can assure you that there is no cookie baking going on at my house today. Except for brief periods, my oven doesn’t come on at all in the summer time. I like to keep the heat down in the house and when you turn my oven on, it heats up the kitchen for sure.
Believe it or not I found a recipe for no bake sugar cookie balls on line so I’m sharing that with you all today. I haven’t tried it out, but the recipe does sound good.
1/4 cup rice krispies
1/4 cup old fashioned oats
1/4 cup + 2 tbsp. Sugar Cookie Cookie Mix
1 tbsp. butter
1/4 cup creamy peanut butter
Optional: Sprinkles, pinch of salt if your peanut butter doesn't have salt
Combine the peanut butter and butter in a small microwave-safe bowl and microwave for 20-30 seconds.
Combine the rice krispies, oats, and sugar cookie mix in a medium sized bowl.
Pour the peanut butter and butter mixture over the rice krispie mixture and mix until well combined.
Add sprinkles and a pinch of salt if desired.
Grab bits of the mixture and squeeze to form balls and then roll in your hands to get a more round shape.
Roll the balls into some of the leftover sugar cookie mix and sprinkles.
Store in an airtight container on the counter or in the fridge.
Sounds pretty good and relatively easy too.

I have counted at least 3 things every day that I'm thankful for over a year and have now reached over 1800 gifts. On my way to 2000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.

With grand kids coming to visit off and on all summer I could put that no bake recipe to good use. Wouldn't they have fun making them all by themselves...with a little supervision of course.
I like the picture of your wood chime, Ma. I love a sugar cookie; always remember making lots of them growing up around Christmas and decorating them with sprinkles, icing, etc. I agree, too hot to bake in the summer, but I think I might try out that no bake recipe you gave us; thanks!
