Today, March 25th, is National Pecan Day! Pecans are a good source of fiber and protein. They are sodium free and cholesterol free. This is the anniversary of when George Washington planted pecan trees at Mount Vernon in 1775, a gift from Thomas Jefferson.
Celebrate and go nuts over pecans!

Here in Ohio we don’t have pecan trees much at all, but we have plenty of walnut trees. Pecans are mainly a southern tree. They require a longer growing period than what we have here. But, pecans are probably my favorite nuts. I love them in turtle candies and in a turtle sundae too, but one of my favorite ways to enjoy them is in chicken salad so I’m sharing my recipe for that today
Chicken Salad sandwiches with Pecans
2 1/2 cups of grilled chicken breast cut into small pieces
1 cup of diced red apple
1 cup chopped pecans
1/2 cup chopped celery
1/2 to 3/4 cup of mayonnaise
1 tablespoon of lemon juice
salt and pepper to taste
In a medium sized bowl add diced apple, and one tablespoon of lemon juice. Stir lemon juice into apples coating them well. This will help keep the apples from turning brown. Add chicken, sliced grapes, diced celery, and pecans. Mix well until everything is mixed through. Add 1/2 cup mayonnaise, if the mixture is too dry you can add another 1/4 cup of mayonnaise. Add salt and pepper to taste. Allow flavors to marry in a covered bowl in the refrigerator for about 1 hour before serving.
Serve on thickly sliced wheat bread, add a couple of slices of green leaf lettuce, and add about 1 cup of chicken salad to the sandwich.

I have counted at least 3 things every day that I'm thankful for a little over a year and have now reached 1500 gifts. On my way to 2000. I'm not stopping, but will continue on counting. There is always, always something to be thankful for.
1517. for pecans, a delicious addition to chicken salad, and candy and ice cream too.
1518. for a krispy kreme donuts, mmm good
1519. for family to laugh with, good times
Enter into His courts with thanksgiving — and in His presence is fullness of Joy!

I too like pecans and that recipe looked delicious! I think its going to be on our menu sometime soon!
