August 1st is Homemade Pie Day, a fine food holiday, particularly for pastry chefs and bakers. Perhaps coincidentally, Raspberry Cream Pie also occurs on August 1st, right in the middle of fresh raspberry season in many regions.

THOUGHT FOR TODAY
Nothing is more memorable than a smell. One scent can be unexpected, momentary and fleeting, yet conjure up a childhood summer beside a lake in the mountains; another, a moonlit beach; a third, a family dinner of pot roast and sweet potatoes during a myrtle-mad August in a Midwestern town. Smells detonate softly in our memory like poignant land mines hidden under the weedy mass of years. Hit a tripwire of smell and memories explode all at once. A complex vision leaps out of the undergrowth.

There is a lot to celebrate during the month of August here at my house. We have several birthdays, an anniversary, back to school days, and the county fair. They are all going to be great days to celebrate!
One of my favorite pies to make is Impossible Pies. You can make lots of different kinds so today I'm sharing just one of the recipes that I have.
Peaches and Cream Pie
3 16 oz. cans peaches, drained OR
3 1/2 cups sliced fresh peaches
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup Whipping cream
2 large eggs
3/4 cup Sugar
2/3 cup baking mix
Almond Streusel:
1 tablespoon Butter, firm
1/4 cup baking mix
2 tablespoon Sugar
1/3 cup Slivered almonds
1 cup whipped cream for garnish
Make almond streusel. Preheat oven to 375 degrees. Grease 10" pie plate. Pat peach slices dry, sprinkle with cinnamon and nutmeg, toss. Spread evenly in plate.
Beat cream, large eggs, sugar and baking mix until smooth, 15 sec. in blender on high. Pour into plate. Sprinkle with Streusel. Bake until knife inserted in center comes out clean, 40-45 min. Top each serving with whipped cream.
Fresh peaches are in season right now. I got some last week at a roadside stand and they were delicious!

The first week of August hangs at the very top of summer, the top of the live-long year, like the highest seat of a Ferris wheel when it pauses in its turning. The weeks that come before are only a climb from balmy spring, and those that follow a drop to the chill of autumn, but the first week of August is motionless, and hot. It is curiously silent, too, with blank white dawns and glaring noons, and sunsets smeared with too much color. Often at night there is lightning, but it quivers all alone.
