It's WEDNESDAY!
It’s Over the Hump Day!
I guess you all heard that the Pennsylvania Ground Hog. Phil, said 6 more weeks of winter. The Ohio ground hog, Buckeye Chuck, said it would be an early Spring. I guess only time will tell. Before I left work yesterday more snow started falling and we’ll have some more overnight that will stick on the ground so winter is still puffing and blowing around my house for sure.
THINKING
God quietly keeps the earth rotating, the planets revolving, and the seasons changing. Without any help from us, He makes the sun rise every morning and set every evening. Every night He changes the pattern of lights in the sky. He turns out the light so we can sleep, and turns it on again so we can see to work and play. Without lifting a finger, we get to enjoy sunrises and sunsets. Every year the seasons change on schedule. We don’t need to pray about it or tell God that it’s time to send spring. All that He does reminds us He is good
…yet, in bestowing His goodness, He did not leave Himself without witness, for He gave you rains from heaven and fruitful seasons, and filled you with nourishment and gladness for your hearts.

NEW IN THE KITCHEN
We all love grilled cheese sandwiches. I especially like them with tomato soup in the winter time. So I went in search of the perfect grilled cheese and here are the results I found.
This will make one sandwich
2 pieces good white French bread or sourdough bread or potato bread
3 slices cheddar cheese (Tillamook or your favorite, but Tillamook is good!
2 tablespoons butter
Cut the slices of cheddar cheese; not too thick, but not skimpy, either; cut one slice in half
Take the two slices of bread and generously butter each of them on one side
Heat up a cast iron skillet over medium heat
Place one of the slices of bread, butter side down, in the hot skillet
Get yourself the cover from a saucepan, or another cover of about the same size
Spread 2 and a half slices of cheese on the bread, then cover it butter-side-up with the other slice of bread; eat the extra, unused half of the cheese slice
Push the bread down a little with the metal spatula, then cover the whole thing up with the saucepan lid (the idea is to heat the air up underneath the lid and melt the cheese faster as you're also browning the bread)
Uncover every minute and check the cooking bread color- you want it golden, not burnt (no matter what Mom says
When it's to the color you like, carefully flip the sandwich over, press down on it with the spatula to squish the bread and cheese together, and re-cover with the saucepan to continue melting the cheese
After about 3-5 minutes of slow cooking, you'll have a wonderfully golden, melty, gooey grilled cheese sandwich
Most said that the everyday white bread is not substantial enough
Almost all said to make sure your bread is evenly buttered
And also to make sure your heat wasn’t too high. Cooking on a lower heat is best.
Some people like good old American cheese, while others prefer Gruyere, Swiss or Colby, or a mixture of all 3. Most preferred seemed to be English Cheddar.

Lord, there are times when we are so concerned about ourselves that we don’t think of others. We ask for the gift of your Spirit that we may grow in awareness of others

AROUND HOME
Quiet days here at my house this week. Just work and peaceful evenings. I’ve read a couple of my library books now and will need to get them back to the library on Saturday. They only let you keep some books that are new and popular for two weeks at a time so I read those first. I still have several others that won’t be due for another 2 weeks. Of course I’ll be checking to see what else is new so I’ll probably bring home a few more to read too.
FAMILY
I talked with DS#6 on the phone the other evening and he’s been busy getting a room all set for the new baby that will come in March. It’s all painted and even has a new ceiling fan. It is an exciting time for them.
I love hearing from and seeing my children and their children and watching my family grow. They all make me one happy ‘ma’!

It snowed overnight here too Ma,so I guess winter is still around for a while, it's bitter cold this early morning 5am Brr.Preparing for a new baby is an exciting time it's wonderful.Cheese I think everyone loves,I have many favourites but it's not too kind to our wastelines he-he.Love the Thinking paragraph.I love to read but for some reason I don't seem to be able to concentrate this week,on the one I am reading.I hope you find some good replacement books to enjoy for the coming weeks ahead.Safe journeys to work stay warm and a quiet day at work for you I hope.Take Care God Bless Kath xx
