It's SUNDAY!
I think the snow has stopped for now. What I thought was 5 or 6 inches had to have been 8 to 9 inches of snow. It wasn’t the light fluffy stuff either. I did little shoveling but did the front and back steps and walkways. Our good neighbor was really helpful doing the snow blowing for us. THANK YOU!

NEW IN THE KITCHEN
Half Time Shredded Beef Sandwiches
1 (2 1/2 to 3 1/2 lbs.) lean chuck roast
1 large onion, quartered and thinly sliced
1 envelope onion soup mix
2 or 3 cloves garlic, thinly sliced
1 (10 1/2 oz.) can of tomato soup
1/4 cup brown sugar
2 tbsp. Worcestershire sauce
1 tbsp. lemon juice
1 tbsp. dijon mustard
1/4 teaspoon ground hot pepper
1/2 teaspoon celery seed
salt to taste
Trim fat from beef and cut into 4 or 5 large chunks to fit in slow cooker. Combine remaining ingredients and pour over beef. Cover and cook on LOW for 9 to 11 hours, until very tender. Pour juice into a small saucepan and simmer on the stovetop for 15 to 20 minutes to reduce and thicken. In the meantime shred beef with 2 forks or potato masher. Return thickened sauce to the beef in the slow cooker. Keep warm and serve with split sandwich buns and coleslaw.
Makes 6 to 8 sandwiches.

AROUND HOME
This is my day of R & R and that’s what is needed here for sure. Still lots to do around the house but I’m taking it slow and easy.
FAMILY
We did have a nice dinner at DS#5’s yesterday evening. It’s always good to get together with my family. Most of the time I see DS#5 and his wife and DD and her hubby more than the rest of my family. Thankfully they stayed in our hometown while the rest moved on to other places. It seems that no matter how far away they are though they are always close to my heart.
COUNTING THE DAYS
Old Man Winter is still alive and strong…it won’t be long though and Spring will come!
