ON THE BRIGHT SIDE
It's SUNDAY!
And it looks like it will be a Happy Birth Day to Grand’babe’ #13 today.
DS#6 called last night to say they were on the way to the hospital. I haven’t received any word since then, but will be on my way there a little later this morning. DS#5 and DD will be going with me to greet our newest member of the family.
Looking at the weather for the week ahead it seems it will be warmer with a little chance of snow off and on but nothing major yet…we’ll see
THINKING

NEW IN THE KITCHEN
The Sunday roast is a traditional British main meal served on Sundays (usually in the early afternoon for lunch), consisting of roasted meat, roast potato together with accompaniments, such as Yorkshire pudding, stuffing, vegetables and gravy.
Sunday roasts can be served with a range of boiled and roasted vegetables. The vegetables served vary seasonally and regionally, but will usually include roast potatoes, roasted in meat dripping
APPLE STUFFED PORK LOIN ROAST
3 Tablespoons olive oil
1 large onion, chopped
2 Granny Smith apples, peeled, cored and chopped
8 fresh sage leaves
2 cups thick-cut white bread cubes, crusts removed
1 egg, beaten
2 tablespoons butter
salt and pepper
1/2 to 1 cup chicken broth, plus more if needed
1 (3 pound) pork loin roast, butter flied
Preheat oven to 375 degrees F.
In a large skillet, heat the olive oil over medium-high heat. Add the onion, apples and sage. Sauté until softened. Remove from the heat and gently stir in the bread, egg, butter and salt and pepper. Add the chicken broth gradually until everything is moistened. Let the stuffing mixture cool completely before putting it in the pork loin. Spoon the stuffing down the pork, horizontally, in a line. Roll the pork over the stuffing, jelly roll style, ending with the seam down and fat side up. Lightly score the fat, in a diamond pattern, with a sharp knife. Tightly tie the pork roast up with butcher's twine, season it with more salt and pepper, and transfer to a roasting pan. Roast the pork in a preheated oven for about 90 minutes or until an instant-read thermometer registers 160 degrees F. Remove from the oven and let rest for 15 minutes before slicing. Garnish with apples and fresh herbs.

Lately I find myself doing far too much wishing and not a lot of anything else. These last weeks of winter will soon be over and I’ve not accomplished all those things I thought I’d get done this winter. Spring will be here before we know it and I’ve much to do here in the house so that when the nice weather is here, I’ll be ready to enjoy the outdoors without feeling guilty for all the things left undone here at home.
It is going to be a busy March both at work and here at home too!
There is not much on the calendar here at my house for the 1st week of March. Of course that too is subject to change…

Exciting to see the new baby. And look at all that snow. IT looks pretty but I know you are ready for spring. Me too. We are in 40's this week and I peeked out the outlook, and should begin sneaking into 50's next week. Hope you get your March agenda done. There can be no guilt on camping trips. ha.
I too have lots up my sleeve for March Ma,to fdo around the home.I try to get everything done before the nice weather comes along.TThen everything is clean and fresh.I will not feel guilty going to the holiday home this year. I have waited far too long for this looong winter to pass.BEACH here I come LOL!!Love all your snowy pictures thankyou for taking time out to share them.Looking forward to seeing new camping ones soon enough.I hope the baby has arrived safely and all is well with the proud parents.Give a gentle cuddle from me.I adore babies,you are so lucky.Take Care God Bless Kath xx
