It's MONDAY!
Today is Presidents' Day, observing the birthdays of George Washington and Abraham Lincoln
Back in my school days we celebrated 2 holidays. One for President Lincoln on the 12th of February and one for President Washington on the 22nd.
Somewhere along the way we were subjected to the Monday holidays and Presidents Day became one of them. In 1971 President Richard Nixon proclaimed one single federal public holiday, the Presidents' Day, to be observed on the 3rd Monday of February, honoring all past presidents of the United States of America
As it is a Federal Holiday all our Banks, Post Offices and schools are closed along with city and county offices.

THINKING
On Mondays I always take the time to pray and reflect upon
the activities of the coming week.
In the book of Hebrews we read that keeping our eyes fixed on Jesus was the only way we can make it successfully through the obstacle course of life. In the midst of today’s trial, tomorrow’s challenge, or next week’s struggle, I’ll be trying to take my eyes off the circumstances and turn Jesus
He’s always ready to help in time of need
Therefore, since we are surrounded by such a great cloud of witnesses, let us throw off everything that hinders and the sin that so easily entangles, and let us run with perseverance the race marked out for us

NEW IN THE KITCHEN
LEFT OVER MONDAY
I’ve had some leftover pork roast in my freezer so this is what I’m using as my leftovers this week. I’m trying out this quick casserole that sounds pretty good
GOLDEN RICE AND PORK
2 Tbsp oil
1 cup raw rice
2 1/2 cups onion, sliced
1/2 tsp. salt
2 chicken bouillon cubes
2 1/2 cup boiling water
2 tsp. soy sauce
2 stalks celery, sliced
2 cups lean cooked pork, cut in strips
Heat oil in large fry pan. Add rice, onions, sliced celery and salt. Cook over med. heat until golden, stirring constantly. Remove from heat for 5 min. Dissolve cubes in boiling water. Pour over rice mixture. Cover and cook about 30 min. until rice is tender. Stir in the leftover pork. Cover and cook another 5 min. Stir in soy sauce and serve
And because I also had some apples that needed to be used, I added about a cup of peeled and chopped apples to the mixture too.

AROUND HOME
It’s back to work as usual for me today. On my calendar for the week ahead is a hair cut after work on Tuesday and getting my taxes done after work on Friday.
Otherwise things will be pretty quiet around
my house this week.
I spoke with DS#1 on the phone Sunday evening and he was telling me that they had a winter storm watch in affect in their area for today. At the time our forecast was only predicting maybe an inch of snow. A little bit later in the evening when I was watching the news I found out that we too have an advisory. They say 3-5 more inches of snow is coming our way.
FAMILY
Lent begins this coming Wednesday, February 17th.
Given the many challenges facing today’s families, now is the perfect time and to prepare for Lent. Home is where we rush and rest, where we hope and
worry, where we love and forgive.
The three foundational practices of Lent are prayer, fasting, and almsgiving
We can make a habit of saying a little prayer whenever someone irritates us, or makes life difficult; or when someone does us a favor, or when something joyful happens . Without a doubt we can pray the day
away.
There are many ways to fast and one of the best ways I know of is to abstain from unwarranted fear and anxiety.
To give of yourself to others, which is a form of almsgiving, give encouragement to the doubting, give a word of praise to the insecure, show kindness to someone who could use a friend, and offer a word of thanks to those whose service of others often goes unappreciated
COUNTING THE DAYS
On the 13th of February Spring began in the Florida Everglades and is now moving steadily northward at 15 miles a day!

60 DAYS UNTIL CAMPING SEASON BEGINS
45 DAYS UNTIL MA RETIRES
Keep looking ON THE BRIGHT SIDE of things.

I have some leftover pork in the freezer, I'll have to give this recipe a whorl.
Spring watch is gettin' closer...33 days now. It's snowing outside my window at 19 degrees. Ewwwww!
I am always thankful we have a caring God upon whom we can lean on not matter what the trial.
