I use mason jars for all kinds of things. I no longer can fruits and vegetables, but there are thousands of wonderful things to do with them. They do make great candle holders and they keep my cookie mixes and soup mixes ready to use.
The picture above is a cookie mix given to me for Christmas one year. Mason jars make wonderful gifts too. You can fill them with things from soups to salads. A mason jar will keep things fresh. I often use them for leftover containers in the fridge
Today is another day to cook here at my house and on the menu is:
Stuffin’ Muffins
Makes 4 servings
2 cups cooked stuffing
1 cup cooked cut green beans
1 cup chopped cooked turkey
1 cup mashed potatoes
1/4 cup shredded cheddar cheese
1 cup turkey gravy
Preheat oven to 425 degrees. Press stuffing onto the bottoms of 8 greased muffin cups. Layer with beans and turkey. In a small bowl, combine mashed potatoes and cheese, spoon over turkey.
Bake 15 minutes. Reduce setting to 350 degrees. Bake 15 minutes longer or until potatoes begin to brown. Let stand 15 minutes. Run a knife around sides of muffin cups to remove muffins. Serve with gravy.
This is a great way to use up those leftovers in the fridge. My daughter gave me a bowl of leftover stuffing to bring home. I have only deli turkey breast on hand so will be using that and I have a jar of Turkey gravy on hand so I’ll be enjoying this wonderful recipe.
You could use whatever vegetable you have on hand, We had green bean casserole for dinner so that is what I used.
We have rain here today, but it’s getting colder so they say it may change over into snow later on. I hope not. I’m glad I got my shopping done yesterday. I did make up a new menu to do my shopping list from and here it is:
Monday - Tuscan White Bean Soup
Wednesday - Skillet Chili Mac
Friday - Satisfying Tomato Soup
Weekend - Pork with Sweet Potatoes
This is my last day to high light Thankfulness, but I’ll still be showing you the three things I’m thankful for each day. Today I’m thankful for happiness, it is an attitude that I choose. Why be sad when you can choose to be happy ? I’ve had days where I’ve been so sad it began to affect everyone around me and it was then I decided just to be happy. Happiness in every day is possible when you look for it. That’s why I choose the bright side of life.
