Today is National Coffee Day which celebrates a world commodity that is second only to oil.
According to legend a sixth century Ethiopian goatherd named Kaldi discovered his goats frolicking from one coffee shrub to another. He realized the coffee berries had stimulating effect, and he began to experiment with the seeds. A century later, brewed coffee emerged from Arabia and the popularity of coffee grew at an exponential rate.
Today over 400 billion cups of coffee are consumed each year. Don’t forget to take a coffee break or two to celebrate this historical and important beverage.

A morning coffee is my favorite way of starting the day, settling the nerves so they don’t later fray.

There is no doubt about it, I’m a coffee lover. I have to start every day off with a good cup of hot coffee. I’m addicted to coffee and need to start my day off right. It wouldn’t be the same without it.
Usually I use my Keurig coffee maker to make my coffee, but it’s on the fritz right now and so I’m using a little 4 cup Mr. Coffee pot that was loaned to me by DS#5 the last time it quit. I like them both and have a variety of coffee on hand for either one of them. I like to change things up a bit and used different flavored coffees to do this. Right now I have Pumpkin Spiced coffee on hand as well as a Donut Shop variety. I also have French Vanilla and Starbucks Fall blend on the shelf. I like them all and switch between them. It may be that I’ll have to get a new Keurig soon. I do miss it and the convenience of making one cup at a time. It tells me it needs a needle head cleaning which isn’t easy. We’ll see….
Meanwhile on the menu for today is yet another new recipe to try :
Harvest Chicken Casserole
2 tbsp. extra virgin olive oil, divided, plus more for baking dish
2 lbs. boneless chicken breasts
salt
ground black pepper
1/2 onion, chopped
2 medium sweet potatoes, peeled and cut into small cubes
1 lb. brussel sprouts, trimmed and quartered
2 cloves garlic, minced
2 tsp. fresh thyme leaves or 1/2 tsp. dried
1 tsp paprika
1/2 tsp cumin
1/2 c. chicken broth, divided
6 c. cooked wild or brown rice
1/2 c. dried cranberries
1/2 c. sliced almonds
Preheat oven to 350 degrees and grease a 9 by 13 inch baking dish with oil. In a large deep skillet over medium high heat, heat 1 tbsp. oil. Season chicken with salt and pepper. Add chicken to skillet and cook until golden brown and cooked through. 8 minutes per side. Let rest 10 minutes, then cut into 1 inch pieces.
Heat another tablespoon oil over medium heat. Add onion, sweet potatoes, brussel sprouts, garlic, thyme, paprika and cumin. Season with salt and pepper and cook until softened. 5 minutes. Add 1/4 cup broth, bring to a simmer and cook covered 5 minutes
Place rice in large baking dish and season with salt and pepper. Stir in chicken, cranberries, cooked vegetables and remaining 1/4 cup of broth. Top with almonds and bake until dish is hot and almonds are toasted. 15 to18 minutes.
This recipe makes 8 servings so I think I’ll cut it in half for just me. I’ll still have leftovers for lunch for a couple of days.
Except for the coffee, the pictures today are from DD who had trick or treat this past weekend at their campground. What fun !
I think I’ll have another cup of coffee!
