Today is National Apple Strudel Day which is like a dessert in a hot pocket. Fresh bakeries are the place to be today . The second you walk in, that cinnamon, sugar smell wafting through your nose is enough to hypnotize you in to buying way too many strudels But no one is judging you , don’t worry.

I found an Easy to make recipe to make Apple Strudel using crescent rolls so that is the recipe I’m sharing today. I’m all for anything quick and easy. I know the old fashioned recipe is definitely better. But here I’m the only one to please so here it is.
Apple Strudel Bisquck
2 apples
1 tbsp butter
1/3 c. walnuts
1/4 c. plane bread crumbs
1/4 c. brown sugar
1 tsp lemon juice
1 tsp cinnamon
1/4 tsp. nutmeg
Dough:
2 c. bisquick baking mix
3 oz. cream cheese
1/4 c. butter
1/3 c. milk
In frying pan, melt 1 tbsp. butter over medium heat. Cook nuts and breadcrumbs for 3 minutes. Set aside. Peel and core apples, cut into 1/2 inch thick slices. In a bowl toss apples, nut bread crumb mixture, 1/4 c. sugar. Lemon juice and spices.
In large bowl place bisquick mix. Cut in 3 oz cream cheese and the butter until crumbly. Stir in the milk. Place dough on surface well sprinkled with more bisquick mix and knead 8 to 10 times. Roll dough into a 12 by 8 rectangle. Place on cookie sheet. Fill the center with apple mixture , make cuts along the sides and overlap the apple mixture left on top and bake at 425 for 15 minutes
Makes 4 servings
My apples are small so I intend to use 3 instead of 2.
I talked to my sister yesterday and they now believe my BIL’s problem was caused by reduced kidney function which is not uncommon with the meds he has been on. They are transferring him to a rehab facility near by to make sure he’ll be able to be mobile when he gets back home. He took a fall when he tried to get out of bed on his own and is some what confused. We can only keep praying and hoping everything will turn out for the best. He is in the best possible hands he can be in.
We’ve had some beautiful weather this week with temps in the mid 70’s and low 80’s. So at least that is something good with lots of opportunities to get out and enjoy the wonderful weather.
The photos today are of two of my grandchildren enjoying a summer camp on line about cooking. They have chef hats and all and even sent me some cookies in the mail that were supposed to resemble the I love you sign, but to me they looked like hearts. The fingers melded together when they were baked.

How cute with the summer camp online with cooking!! Everything looks like it is delicious. And you are right, kids love to cook! That apple strudel recipe looks delicious too!
Glad that they found out what was going on with your BIL. I bet the stay in rehab will help him to be able to come home soon and hopefully be able to take care of himself there.

Thanks for the update on your BIL! Good to know everyone's taking steps to ensure he's strong enough to come home. My DIL's 80 y/o father (who lives with them) has taken to falling, and it's frightening indeed if one doesn't know how to correctly lift him back again.
Love those 'I love you' cookies in the mail. And the children look so cute in their chef hats. What a thoughtful gift!
