Today is National Chocolate Eclair Day which is has been a favorite treat since the 1880’s. The French call the dough of these treats, choux, which is carefully baked to allow for a hollow interior. Then cream, custard, or puree is piped into its center and is topped off with a fondant icing.
With it’s flaky dough and sweet creamy filling, this dessert is a global favorite. To celebrate National Eclair Day, get some from your local bakery

I found an easy elair dessert recipe to share for today. It’s a quick and easy dessert recipe to use when you need a dessert in a hurry.
Chocolate Eclair Dessert
2 individual packages graham crackers
2 3 oz pkgs. instant vanilla pudding mix
3 cups milk
1 8oz. container frozen whipped topping, thawed
1 16 oz package prepared chocolate frosting.
Line bottom of 9 by 13 inch pan with graham crackers
In a large bowl, combine pudding mix and milk; stir well. Mix whipped topping into pudding mixture. Spread half of mixture over graham cracker layer. Top with another layer of graham crackers and remaining pudding.
Top all with a final layer of graham crackers and frost with chocolate frosting . Refrigerate at least 2 hours before serving to allow graham crackers to soften.
I’ve made this many times and it’s a good summertime dessert.
It was a good weekend here but with scattered showers to accompany hot and steamy temps. More rain today and tomorrow too. So needless to say I won’t be getting outside much.
Today will be spent getting laundry done. It always amazes me how much I have, as it’s only me here. The pictuers today are from this past weekend Fathers Day celebrations with some of the babes. One of my granddaughters also made her first communion and that is shown in the last picture of today’s post. Due to the virus it was immediate family only. Sorry we couldn't join them to help her celebrate this special day.

Oh my on that éclair dessert! I almost didn't read the instructions, thinking it was going to be pretty labor intensive. Not at all … and who doesn't like pudding or graham crackers? You've got my mouth watering!
