Today is National Eat Your Veggies Day which falls in the middle of National Fresh and Fruit and Vegetables Month. The celebration is an opportunity to remind everyone to continue with this part of a healthy diet.
Vegetables are essential part of a healthy lifestyle. Vegetable can be enjoyed in a main meal or as a snack, in a variety of different ways. They contain a little protein and varying proportions of vitamins. Some contain antioxidant, antibacterial, an antiviral properties. Many also contain fiber which is important for gastrointestinal function.
When eating a diet consisting of the recommended amounts of fruits and vegetables, it may help to lower the risk of heart diseases and type 2 diabetes. These diets may also help to decrease bone lose and protect against some cancers. The potassium provided may help prevent the formation of kidney stones.
It is recommenced by the USDA Dietary Guidelines for Anericans to eat 3 to 5 servings of vegetables per day. These recommendations may vary depending on age and gender. For most vegetables , one serving is equivalent of 1/2 to 1 cup and can be eaten raw or cooked.

It’s difficult to think about anything but pleasant thoughts while eating a homegrown tomato.

This time of year things are growing in our gardens and usually by the 4th of July we’ll have fresh corn on the cob and ripe tomatoes and maybe even green beans. I love to visit our roadside farmers markets here to get fresh vegetables because I no longer have a garden of my own. DD says they have peppers growing in there’s and my sister has small tomatoes growing on her plants, but nothing matured enough to eat yet. We had a late spring, so we’ll be late catching up with the growing season here
Fresh anything has such a better taste than anything else, even includes potataes. Our favorite stand usually has it all. Fruits and vegetables. I can hardly wait to get some. I’m thinking I should get a small freezer so I can have more room to store things as they come in season. Then I’ll have fresh veggies all year long. They usually aren’t very expensive at all and my refrigertor freezer is a small one.
Hopefully soon there will be a trip to the country to get fresh veggies in my future
Easy Sweet Veggie Stir Fry
1 onion, thinly sliced
1 red bell pepper cut into strips
1 c. broccoli sliced
1c diagonally sliced carrots
2 c. broccoli florets
2 tbsp extra virgin olive oil
1 tbsp.. soy sauce
1 tsp. garlic powder.
1 tsp. ginger
1 c. whole grain brown rice, optional
Start by cooking the rice and preparing all the vegetables.
In a large skillet on high heat, add olive oil and onion and carrots, stir fry 2 minutes. Add remaining vegetables, stir fry 5 to 7 minutes until tender crisp.
Add soy sauce, garlic powder, ginger, stir fry until well blended. Serve over cooked rice, if desired.

What’s New at My House

I love our local farmers markets! I just bought some red pepper and cucumber I'm going to cut into strips and keep in a zip-lock baggie for snacking. Now, only if I had some broccoli and carrots to make that stir-fry. Next week, for sure!
I miss our farmers' markets. I hope they are open now, with some restrictions?
