Today is Pink Day which is a day to take care that all your clothing and accessories are pink. It’s a day especially for the ladies because pink is a girls favorite color. Pink is any color between bluish red and red, of medium to high brightness and low to moderate saturation.
The association of pink with girls dates to the modern era, probably developing at different times in different countries. By the 1950’s pink was strongly associated with feminity and the romantic.
Pink Day was established in 2007 after a pair of students saw one of their fellow students being bullied for no other reason than he was wearing a pink shirt. Bullying doesn’t tend to follow any kind of rhyme or reason. It’s merely the exertion of power over those who are weaker or stand out as unusual. Pink Day is dedicated to beating the bullies and braking the cycle that creates and perpetuates this damaging behavior in school.s
When someone refers to someone who is in top form, good health or good condition they are said to be in the pink. And when someones sees pink elephants they are hallucinating due to too much drink.
When you get a pink slip, it means they’ve been fired from their jobs and if you are tickled pink, you are exceptionally pleased.

I’ll be wearing my pink today if for no other reason than I like the color and have a lot of it. I may even paint my toenails pink as I have yet to paint them for the summer. I don’t usually polish my nails very often, but summer sandals look better with painted toenails I think.
It’s Taco Tuesday once again and I’m making a summer taco salad today so I’ll share the recipe. It’s not too spicy but can be adjusted to how you like it, just add more chili powder to the beef.
Summer Taco Salad
serves 4
1 cup baby plum tomatoes, sliced in half
1 lb. lean ground beef
olive oil
salt and pepper
a pinch of chilli powder
1/4 tsp paprika
1/4 tsp. cumin
2 garlic cloves, minced
1 lime
1 avocado
2 heads romaine lettuce
1 tin of kidney beans , drained and rinsed
4 spring onions thinly sliced
2 handfuls plain salted tortilla chips
3/4 b. crumbled feta cheese
For dressing:
6 tbsp tomato paste
6 tbsp cider vinegar
4 tbsp olive oil
3 tbsp maple syrup
1/4 tsp paprika
Preheat oven at 340 degrees and slice tomatoes in half and place on baking tray, cut side up and roast for 30 minutes
Meanwhile cook your beef with a little olive oil and then break up meat with a spoon as it starts to brown and continue to keep stirring it around in the pan until fully browned. Season with salt and pepper and add chili powder, paprika, cumin, garlic and lime zest and juice. Stir to coat the beef and cook for a minute or two. Take off heat and cover to keep warm.
Combine all the dressing ingredients in a jar and mix well.
Shred lettuce into fine strips into a serving bowl. Prepare avocado by halving, stoning, scooping from the skin and slicing into small chunks. Sprinkle the chunks over the lettuce. Add the drained and rinsed kidney beans with the sliced onions. Pour a quarter of prepared dressing over top and stir in the beans to coat. Top with feta cheese. Spoon the meat mixture over the cheese and crush up tortilla chips and finish with roasted tomatoes.
Serve the salad with rest of dressing and some crushed tortilla chips.
I didn’t have feta cheese so I used mozzarella instead and it worked just fine.
I’ll be in the pink with this recipe for dinner tonight.

Seeing your Precious One always puts a smile on my face!
I don't think I've a single article of pink clothing, save an old Vanity Fair nightgown my mother gave me for Christmas years ago. I'll have to put that on tonight! I've been eating lots of salads lately … usually with loose meat, cukes, bell pepper and walnuts. Reading your ingredients, I think I should add scallions to my shopping list … avocado, too!
