Today is the Summer Solstice. the first day of Summer which is the longest day of the year. Summer is the warmest of the four temperate seasons, between spring and autumn. Usually schools and universities have a summer break to take advantage of the warmer weather.
Though the solstice is an instant in time, the term is used like midsummer to refer to the day on which it occurs.
After today the days will start to get shorter one minute at a time until the Winter Solstice, the shortest day of the year.

I love the longer daylight hours of summer and the warmth that makes it so enjoyable to be outside. Since we have such severe winters with the cold and dark cloudy days,, it’s made me appreciate summer all the more.
Although the heat and humidity will sometimes keep me indoors for comfort, I can’t help but love summer days. Thanks to central air conditioning I’m able to live in comfort every day.
I’m more aware and alert in the summer than any winter day. When the short winter days come all I want to do is hibernate and I sleep a lot.
Although I may take a summer afternoon nap on the porch. I tend to do more now than any other time of year. It’s summer today and it’s going to be a hot weekend here so today I’ m making up a nice summertime meal to have for the weekend.
Slow Cooker Beef and Broccoli
1 beef bouillon cube
1 cup warm water
1/2 c. soy sauce
1/3 c. brown sugar
1 clove garlic minced
1 tbsp seasame oil
1 1/3 lbs. beef sirloin, cut into 1 inch cubes
2 tbsp. cornstarch
2 lbs. brocolli florets
1 cup cooked rice
1 tbsp. sesame seeds, optional
Crumble bouillon cube into warm water and stir to dissolve; add soy sauce, brown sugar, garlic, and sesame oil and stir to dissolve sugar.
Put beef cubes into slow cooker. Pour in sauce mixture to cover the beef.
Cook on low for 6 to 8 hours or high for 4 hours.
Spoon 2 tbsp. liquid from slow cooker into a bowl. Whisk cornstarch into liquid and stir the corn starch mixture into the liquid in slow cooker until consistent and color.
Cook on high until sauce thickens about 30 minutes.
Bring a pan of water to boil and cook broccoli until tender. Add to sauce in slow cooker and stir to coat. Laddle broccoli beef over portions of cooked rice and garnish with sesame seeds if desired.
Makes 4 servings.
I always chop the brocolli stems and add those too. Waste not, want not.
It will be a quiet weekend with nothing special planned, but I do intend to rest and relax a lot. The pictures today are of summertime at my house.

What a delicious recipe! I am enjoying this summer more than I usually do. Probably because of the Covid thing and being so isolated for so long. Auhust os our hottest month and it is fierce! So far we have only had a couple of 100 degree days. 89-93 is the forecast for the coming week.

Tom always orders beef and broccoli at the Chinese restaurant, so I'm going to see if he likes the looks of this! So far (knock wood) we've been warm, but not miserable hot and humid. Your sun porch sounds like a great place to nap. As long as I've a full tummy and a comfy pillow, any day of the year's a good day for my nap.
