Today is National Nachos Day which celebrates a popular Mexican dish that can be served as a snack, appetizer or Main course. The perfect recipe for nachos includes a huge plate of stacked tortilla chips topped with melted cheese, salsa, sour cream, jalapeños, and quacamole.
Nachos originated in a city in Mexico. One night in 1943, the wives of ten U.S. soldiers stationed at Fort Dunchan arrived at a restaurant called the Victory Club after it had already closed for the evening. Restarant employee, Ignacio, Nacho Anaya quickly put together what he had left in the kitchen for the women and called the dish Nachos Especiales. Word about this tasty treat quick spread throughout Mexico and Texas. Anaya went on to open his own nacho restaurant and his original nachos recipe was printed in St. Annes’s Cookbook in 1954.

Life is a nacho. It can be yummy-crunchy or squishy-yucky. It just depends on how long it takes for you start eating it.

To me a plate of Nachos is often a main dish. It’s just too much to qualify as a snack. I looked for and found the original Nacho recipe so that is what I’m sharing today.
Recipe for Original Nachos
3 corn tortillas
1 c. shredded longhorn cheese
1 tbsp Canola Oil
12 pickled Jalapenio slices
Preheat oven to 350 degrees. Brush oil on both sides of each tortilla Cut each into quarters and bake them for 15 to 20 minutes. They will turn dark brown,. bit do not let them burn.
Shred the cheese and distribute it about the tortilla triangles. Place a slice of Jalopenioa on each. Bake the triangles in a 350 degree oven until cheese is bubbly. Aternately you can place them under a boiler for a minute or so. Keep a close watch so that they do not burn.
One of my favorite Nacho Dips is to simply mix to Creamy Velvetta cheese together with spicy diced tomatoes and sometimes I add browned sausage,, stirring it into the cheese mixture.
Yum!
I’ve no pictures of nachos today but do have plenty of ones of my family who all like to eat.

My family loves to eat and all are good cooks!
I have a recipe for nachos that we make occasionally. The original recipe doesn't call for ground meat, but we ad ground meat so it is a main meal. It is so tasty! It is funny how it got its origin, but I think that is the same for a lot of favorite foods. Starts as a creation by someone hoping to put a meal together for others and then it grows from there.

Before our crazy dogs, Tom and I used to enjoy fixing a big platter of nachos and sticking it between us on the sofa. (Now my taste buds are jumping up and down, lol.) I've also seen them served with sliced black olives and Tom likes his with refried beans spread across the chip/under the cheese. Yummm!
