Today is National Pickle Day which honors pickles , a popular food for thousands of years. In 2030 B.C. cucumbers were imported from India to the Tigris Valley. Then they were first preserved and eaten as pickles.
In ancient Egypt people consumed pickles for their nutricsal value and because they were thought to enhance beauty. Cleopatra attributed her good looks to her full diet of pickles. Napoleon believed that pickles offered health benefits for his armies, so he offered a huge cash prize to anyone able to preserve them safely.
Today we honor the culinary history of pickles. This versatile vegetable can be enjoyed as a condiment, snack, or side dish. Stock up on your favorite kind of pickles and celebrate National Pickle Day!

I always have a variety of pickles on hand. I have sweet and dill pickles in different shapes on sizes. And pickle relish is part of that too. They are great on sandwiches and as a snack. I also have a pickle dish which is for serving different pickles and vegetables at a meal. We used to call it a relish plate. Pickling cucumbers for pickles isn’t really very hard. My mom used to make refrigerator pickles that were delicious. So I thought I’d share a recipe for them today.
Easy Refrigerator Pickles
6 cups thinly slice cucumbers
2 c. thinly sliced onions
1 1/2 c. sugar
1/2 tsp salt
1/2 tsp mustard seed
1/2 tsp. celery seed
1/2 tsp. numeric
1/2 tsp cloves
Place cucumbers and onions in a large bowl, set aside. Combine remaining ingredients in a saucepan; bring to a boil. Cook and stir just til sugar is dissolved. Pour over cucumber mixture; cool. Cover tightly and refrigerate at least 24 hours before serving. The longer they sit in the refrigerator the better the flavor. They can be stored safely in the refrigerator for up to a month.
Now is the perfect time to make some up for Thanksgiving dinner as a special treat for the family. Our family Thanksgiving will be on Saturday, November 23rd this year and DS#6 and his wife are to be our hosts. They have rented a room at a shelter in one of their local parks to make room for all of us. We are getting to be quite a huge crowd and they feel there will be more room there than at their home. I stopped hosting the holidays several years ago for that reason and all the kids have taken over. It’s been a nice treat for me after doing so many holidays over the years. They will fix the Turkey, stuffing, and mashed potatoes and all I have to do is take a dish to share as will everyone else. It will truly be a feast for the tummy! We will gobble til we wobble for sure!
I’m excited just thinking about this family get together. What a lot of fun it will be !

In a pickle or in a jam, homemade is always best.
Now I'm hungry for pickles!
Funny, my tummy likes pickles but I get heartburn with cucumbers :) I do like sweet pickles and pickle relish. Good idea to rent a place to hold your holiday gathering. It will be here before you know it!

Funny. It sounds like a bad cliché, but the only time I 'went for' pickles was when I was pregnant. Couldn't get enough! Now, almost 50 years later, I'm the one picking them off my sandwich. Wow, it's hard to believe Thanksgiving's right around the corner. Your son's plans to have it at a public shelter sound pretty darn smart … no muss, no fuss!
