Today is Election Day in the US which is the day set by law for general elections of public officials. These include national, state and local government officials.
Today is a civic holiday in which all are encourage to get out and vote. It’s not as big a day as when there is a presidential election, but still every vote counts.

It’s important to cast your vote. As impossible as it seems, years ago not everyone had the right to vote.There were brave people that fought for the right and we shouldn’t take it for granted.
I’m not going to tell you haw to vote, but am only encouraging you to do it. I remember years ago when DDH and I used to cancel out each others votes, but still that didn’t stop me from doing it. Every vote counts and I wanted to make sure mine did. Ha!
It’s been awhile since I did a taco Tuesday post so today I found a new recipe to try out.
Taco Tuesday Casserole
Cooking spray
2 lbs ground beef
1/2 d. diced onion
1 1/2 c. water
9 tbsp taco seasoning mix
5 four tortillas
1 can whole kernel corn, drained
2 c. shredded Cheddar cheese
8 corn tortila chips, or more to taste
1/4 c. diced tomatoes, to taste
2 tbsp. chopped olives, optional
Preheat oven to 350 degrees. Spray a 9 by 13 inch baking dish with cooking spray.
Heat a large skillet over medium high heat . Cook and stir beef in the hot skilled until almost browned and crumbly, Add onion and stir until beef is browned and onion softened. Mix water and taco seasoning into beef mixture and simmer about 5 minutes.
Line the prepared baking dish with tortillas and top with 1/2 of the beef mixture. Spoon 1/2 of the corn over the beef layer and top with 1/3 of the Chedder cheese. Crush the tortilla chips over cheese layer.
Repeat layers with remaining ingredients, ending with Chedar cheese, tomatoes and olives.
Bake in oven until heated through and cheese is melted. About 15 to 20 minutes.
Makes 8 servings.

I like your Thanksgiving decorations, Ma! Our particular part of Phoenix doesn't have an election today, but if it did, we would be out there voting. I do consider it a privilege to do so! Just think about a year from now we'll be voting for president! That taco casserole looks yummy!

I like that FDR quote! A privilege, indeed! Anything with 'taco' in the name perks my interest -- and this recipe is no exception!
Voting is the voice our government has to hear.
We are going to go vote in a little while and then go out to eat lunch. Then I am off to spend the afternoon and evening with the Bell Kids.
I am so excited about yet another good recipe!! This is going to be a meal for our weekend! I'm going to have a whole folder of your recipes soon!
