Today is National Parfait Day which is the perfect day to have a Parfait because Parfait means perfect in French. Parfaits were originally served on decorative plates, but today they are typically layered in tall, thin glasses. There are many variations on the original parfait recipe which originated in France in the 19th century.
Parfaits can be made by layering ice cream with granola, nuts, yogurt, fresh fruits and whip cream. Whip up your own for National Parfait Day.
Heres the recipe for the traditional coffee flavored French parfait.
1/2 c. sugar
4 eggs
1 c. whipping cream, very cold
1 tsp. instant coffee
1 tbsp, vanilla sugar
4 oz. graound praline
Make a simple syrup by placing the sugar in a sauce pan with two tablespoons water and bring it to a boil for two minutes.
Break the eggs into a mixing bowl and beat them. Pour the simple syrup in a steady thin stream whilst continuing to beat the mixture. Add the coffee and continue beating until mixture has cooled and become very thick. about 10 minuets.
Whip the cream until soft peaks form,. Add the vanilla sugar, then continue whipping until it’s firm.
Fold the whipped cream into the whipped egg mixture and then fold in the ground praline. Just keep folding until everything is folded.
Carefully spoon the mixture into parfait glasses.This recipe should give you enough for six, cover and freeze for at least 4 hours before serving.

I found a parfait recipe for Thanksgiving so I’m also sharing that recipe today.
Pumpkin Parfait
1 3/4 c. cold milk
1 box vanilla instant pudding
1 c. canned pumpkin
1/2 tsp pumpkin pie spice
1 pkg. 8 oz. cream cheese, softened
3/4 c. powdered sugar
1 1/2 c. whipping cream
6 amaretti cookies
In medium bowl, stir milk and pudding mix with a whisk for 2 minutes. Stir in pumpkin and pumpkin spice. Refrigerate until ready to assemble parfaits
In another medium bowL, beat cream cheese and powdered sugar with electric mixer on low speed until blended and smooth. In a chilled large bowl, beat whipping cream on high speed until stiff peaks form Fold the whipped cream into the cream cheese mixture.
In each of 6 parfait glasses spoon 1/4 c. pumpkin pudding mixture ; top each with 5 tablespoons of cream cheese mouse mixture. Repeat layers . Refrigerate 2 hours or until serving time. Top each parfait with a cookie.
We also used to make a breakfast parfait by using granola , Yogurt and fruit. that was very good too. Maybe you can enjoy one of these ideas today and celebrate.
I’m still full from our Thanksgiving and the leftovers I had yesterday so I’m not sure I’’ll have room for dessert. A good walk in the woods should help. That is what the pictures are of today. A walk that some took on our family Thanksgiving day. We were at a beautiful Metro park and thankfully the rain held off until just as we were leaving.
Today is supposed to be one of the nicer ones we’’ll be having for a while so I’m getting outside today to mulch up more of the many leaves we still have on the ground. So I’ll be getting my exercise only in a different way. It will be interesting to see how much longer there will be leaves left on the trees. Last year at Thanksgiving time was when I did my final cleanup. Looks like it’ll be awhile before I quit this year.

Remember Desserts is stressed spelled backwards.
What a pretty place to take the walk last year! I hadn't thought of a chocolate parfait before but that sounded good along with the pumpkin pie one. I'm not one for dessert these days but a bite here and there is always a good way to end a fine meal!

How picturesque is that stone bridge?! Seeing that structure, I can see where walking after dark would be dicey.
The original parfait recipe sure sounds interesting … but too labor intensive for this rookie. I much prefer your pumpkin version. :)
