Today is National Taco Day! A taco is a tradition Mexican food made with chicken, beef, vegetables or seafood. The filling is folded inside a soft or hard tortilla and served with toppings such as cheese, salsa, or guacamole.
To celebrate this day, make or buy a taco. Enjoy!

Life is hard, Tacos help…
These days I usually have a taco salad instead of an actual taco. They are easy to make and taste delicious. Since I had plenty of fresh vegetables in the fridge and some leftover chili, I made my taco salad with that..
Left Over Chili Taco Salad
Makes 2 servings
1/4 c. sour cream
1/2 c. chopped green pepper
1/4 cup chopped green onions
3 cups shredded lettuce
8 cherry tomatos, halved
leftover chili
1/2 c. crushed corn chips
1/2 c. shredded cheddar cheese
Combine vegetables in a bowl. Top with chili, and sour cream and sprinkle with corn chips and cheese. I used a mixture of peppers in my salad as you can see in the picture above.
Today’s holiday tip: Get ready for catalog and online shopping. Shopping from home has many advantages. No more sore feet, no staggering to the care weighed down by shopping bags.
Several of my grandchildren participate in school fundraisers and I love browsing in there catalogs. I always keep an eye out for something I could give as a gift. The prices are usually much the same as in the stores, so I help out the schools and myself as well. I don’t do much online shopping at all but I do love catalog shopping.
They say we’ll have scattered thunderstorms this morning then cloudy skies this afternoon. Our temps remain warm for October in the mid 70’s. It’s my day to stay in and get some things accomplished inside today!

Tacos make me SMILE!
I like tacos. They are so simple to make and so delicious! Online shopping has gotten so much easier these days too. Wal-Mart here offers free 2-day delivery on things ordered online. Can't beat that!

I did not know it was national Taco day but I put the ingredients on my grocery shopping list to make Tacos this weekend.....
I adore Tacos! I think I like soft tacos better than the hard ones. We are finally getting Taco Bell over here so I am excited about that! Your taco salad looks delicious!
