Today is National Pumpkin Cheesecake Day which is a day to pay homage to a fall favorite and enjoy a delicious slice of cheesecake.
During the autumn months, festive pumpkin flavored treats are everywhere. You can find all sorts of goodies like pumpkin ice cream, pumpkin pancakes, pumpkin soup, pumpkin coffee, pumpkin muffins, pumpkin bread, and pumpkin cookies and pumpkin cheesecake, which is today’s reason to celebrate.
Pumpkin cheesecake is traditionalyl made with a graham cracker just and a pumpkin puree cheesecake filling. Celebrate today and enjoy a delicious slice or two!

Although I do love cheesecake, I don’t think I’ve ever had pumpkin cheesecake before. I’m not sure how I missed it, but I looked for and found an easy recipe to share and hopefully will try out soon.
It’s an Impossible pie made with Bisquck baking mix which has become one of my favorite ways to make a pie.
Impossible Pumpkin Cheesecake
1 15 oz can pumpkin
1 8 oz. pkg. cream cheese,cut into 16 pieces and softened
1/4 tsp. vanilla
3 eggs
3/4 c. sugar
1/2 cup Bisquick mix
1 1/2 tsp. pumpkin pie spice
1 cup caramel topping, if desired
Pecan haves, if desired
Heat ove to 350 degrees. Spray 9 inch glass pie plate with cooking spray.
In blender place all ingredients except caramel topping and pecans. Blend on high about 2 minutes or until smooth. Or you can beat in a bowl with hand beater 2 minutes. Pour in pie plate.
Bake about 45 minutes until puffed and center is dry. Cool completely, refrigerate until chilled. Drizzle with tipping and garnish with pecan halves. Store covered in refrigerator.
More than not, I take the quick and easy way in most everything I do these days. There are many more recipes that are delicious, but take more time.
Today is I’m going to a small family gathering. Only 3 of my children and their families will be there, but still it is always good to be together. I’m going with DD and her family. They always very thoughtful and often provide transportation for me when going a distance.
It’s probably one of those visits where we’ll spend more time on the road than anything else, but it’s worth it when it comes to being with family. Sadly we do not all live very close together.
My family is very important to me and I try never to miss out on a chance to spend time with them. I’ll be praying for a safe trip for all there and back.
I have no cheesecake pictures to share today but am sharing more pumpkin pictures. It seems I’ve collected quite a few over the years.
Holiday tip for the day: Time to buy Christmas stamps
Holiday stamps are available at the post office. Buy stamps early, and you'll have your choice of seasonal designs. I’m one that likes to still mail out cards so getting those stamps is a must for me. I know a lot that don’t do cards at all anymore, but if nothing else, I’m doing my part to keep the card companies in business.

I like cheesecake but I've haven't had pumpkin cheesecake either. Might have to remedy that this holiday season since there's Cheesecake Factories here that I think feature pumpkin cheesecake this time of year. Enjoy your family gathering! Family times are so important, no matter how short they might be.

That recipe sounds yummmmy, for sure. It's a 2-hr. drive to the nearest Cheesecake Factory, which is probably a good thing for my waistline. That's the one dessert I can't/won't resist. You've prompted an old memory … my mom made the BEST cheesecake and used Zwieback toast crackers for the crust.

Okay, we're buying canned pumpkin and Bisquik, and some pecans. Anything that has "pumpkin" as its main ingredient has my interest.
You will certainly enjoy your trip with your family! We live near my husband's siblings, while mine are in the midwest. We are in CA. I visited with my two remaining siblings in July. Amazing time.
