ON THE BRIGHT SIDE
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Today is World Smile Day which celebrates the ever popular yellow smiley face. It also offers us an opportunity to do an act of kindness. The intent of World Smile day is to do an act of kindness, or help one person to smile. Why not do both! Turn that frown upside down !
Today is also World Teachers Day

THOUGHT FOR TODAY
If you don’t have a smile, I’ll give you one of mine.

Even when life gets you down, there’s always a reason to keep smiling. When we share smiles wonderful things happen. A smile says you care and want someone to be happy. Smiling is contagious and when you smile, you make others smile too.
Today’s holiday tip: Declutter before you decorate. We start to decorate in the fall, then continue into Halloween and it’s in full force by Turkey day. Come Christmas the average home is drowning in decorations. There is no room for clutter amid the tinsel of the holidays.
Keeping clutter free is one of my biggest downfalls. I have way more stuff than what I’ve got room for. Getting out something new means that there must be room to put away things too. The truth is that to put everything in its place, you have to have a place to put it.
Hard to believe the end of another week has come. Today I’ll putting some finishing touches on the house and maybe making something good to eat for the weekend ahead.
I’ve got a good size cabbage in the fridge and I’m thinking about making cabbage rolls. I haven’t made them in a long time and usually only do so when I’ve got a crowd to feed, but they do freeze well, so no doubt I’ll putting some away for another day. The recipe below is an easy version with a fraction of the time and effort. And if you want to swap out the ground beef for ground turkey meat it works just fine.
Unstuffed Cabbage Rolls
Serves 5
1 tbsp. olive oil
1 yellow onion, chopped
1 tbsp. minced garlic
1 1/4 lbs lean ground beef
salt and pepper to tast
1 large can tomato juice
1/2 tsp paprika
1/2 tsp. thyme
1 Tbsp. brown sugar
1 Tbsp. red wine vinegar
1/2 medium head cabbage, chopped
1 1/4 c. rice, cooked or not, it’s your choice.
Heat olive oil in a deep dish 12 inch skillet or a pot over medium heat. Add beef, onions and garlic . Sauté and season with salt and pepper. Let brown and break up beef until cooked through. Add tomato juice, paprika, thyme, brown sugar and vinegar. Bring to a simmer. Add cabbage , season with salt and pepper to taste. Reduce heat, cover and mix occasionally until cabbage is tender. I like to add the rice to the mix when the cabbage is tender and let it cook in the juice.
You can serve warm over rice or mix the rice in the cabbage mixture before you serve it which is the way I like it.
Every day you spend without a smile, is a lost day.

Here is a ***BIG SMILE*** from me to you! Have a FANTASTIC Friday!
Sending a smile back your way, Ma :)
My mom made cabbage rolls but we called them "pigs in the blanket." They were so good, but haven't had them in years. Might have to try making them some time.
betty
That's a great-sounding recipe, Pam! Because my (former) hubby loved having a big Open House reception on New Years Day, many "Eves" were spent cooking and baking (seemed like 100) cabbage rolls. I've not tried making them since, but now Tom's talking about having a similar reception this year ...
Oh, I do so love a sweet sincere smile! I have always been told I have a smile that lights up the room. Not so sure about that! My mom made cabbage rolls, but I was never fond of the filling. I used to just eat the cabbage bits and she would put potatoes and carrots in with them, so I would eat them also. Just not the meat. I make my own cabbage rolls now, completely different and I love them. They are one of my favourite things! I guess that is the one thing my mom made that I didn't like! Darn, I am wanting cabbage rolls now. Guess I will have to make some! xoxo
