Today is National Pumpkin Day which celebrates one of the harbingers of the harvest season, appearing every year as the first sign of autumn. There are over 45 different varieties of pumpkin and they range in color from white to red, to even blue.
Pumpkins can be grown on every continent except Antartica and the United States produces about 1.5 billion pounds of them each year. The largest ever recored weight a total of 1,810 pounds and was the size of a dumpster.
Celebrate National Pumpkin Day by carving a pumpkin in time for halloween and don’t forget to bake the pumpkin seeds for a healthy autumn snack.

Pumpkin spice and everything nice.
I’m going to be celebrating today by cooking up the pie pumpkin that has been decorating my dining room table and I’ll be using it to make pumpkin pies. I always like to bake the seeds too and enjoy them for a treat.
In case you’d like to try making your own pumpkin pie filling I thought I’d share this recipe with you.
Pumpkin Pie Filling From Scratch

Canola oil, for oiling pumpkin
For the pumpkin: Preheat oven to 375 degrees. Remove the stem and scrape out insides. Cut the pumpkin in half and lay the pieces cut side down on baking sheet lined with aluminum foil. Rub oil over the skin and bake until fork tender about one hour. Let cool.
For the filling:
1 14 oz. can sweetened condensed mile
1/2 c. heavy cream
2 tbsp. cornstarch
2 tbsp. molasses
2 tablespoons canola oil
1 tbsp. cinnamon
1 tsp. ginger
3 large eggs.
Scoop out the pulp from the roasted pumpkin and puree in a food processor until smooth. You should have about 4 cups.
Add the condensed milk, cream, cornstarch, molasses, oil, cinnamon, ginger, salt and eggs and combine thoroughly.
Pour the filling into the crust and bake until the filling is set in center, about one hour. Let cool for 30 minutes
You can freeze pumpkin pies before they are baked. Just thaw and bake when needed. You can also freeze just the filling then thaw and use when ready. You can do the same with squash puree such as butternut or acorn, as well as sweet potato.
Today I’m just getting the pumpkin filling ready, not a pie. I will be baking that for Thanksgiving. I’m not carving my pumpkin either but today’s picture are some my grandchildren have done in the past.
I didn’t get yard work done after all as they came to fix a water leak outside. They had to dig a hole in the yard to to get to it and workers were here most of the day. It’s really not bad, no grass has grown and the leaves will wait till next week to be done.
It seems it’s always something unexpected, but on the bright side it’s good that the leak was found before the ground froze.

Goa picks you from the patch, brings you in and washes off all the dirt. Then He cuts the top and scoops out the yucky stuff. He removes the seeds of doubt, hate an agreed. Last, He carves you a new smiling face and puts His light inside of you to shine for all the world to see.
Counting at least 3 things every day that I'm thankful for. There is truly is always something to be thankful for.

The workmen are to be here again today, but we may have showers later on so we'll see how that goes.
Water! Something we take for granted but when we don't have it, don't we know how precious it is? Hope you get yours back soon! When the water dept. Would dog holes in my neighbor's yards, they were tiny little bitty holes, for US, it looked like a burial site for an elephant! ☺
I don't know that I'll be prepping any pies this year … but that's good to know about freezing them before they're baked. Squash puree? YUM!

I would imagine a lot of pumpkins will be carved this weekend. I never made a pumpkin pie from scratch. That would be fun to do some year. Its good they found the water leak before it caused hopefully not too much damage.
