I’m very thankful that I am literate. I can read and write. But sad to say in this day and age there are still many who can not. They say that one in six adults in our world are not literate and more than 67 million children do not attend school.
Too often we take our education for granted and many children don’t want to go to school, but it is a gift that we have that many do not. The ability to read and write is tied to every thing we do.
Yesterday I made a big bowl of potato salad to go with the chicken that DS#5 and his wife are having at the birthday party today. I made it with the new potatoes from the farmers market. So I thought I’d share the recipe today. The new potations give it special flavor. It’s the perfect potato salad to take to a summer potluck.
New Potato Salad
2 pounds new potatoes, unpeeled
1/2 tsp. salt
3 hard cooked eggs, peeled and chopped
1 1/2 c. minced celery
1/2 to 1 c. sweet onion, finely chopped
1/2 c. mayonnaise
1 to 2 tsp. prepared mustard
1/2 c. chopped sweet pickles
Salt and pepper to taste
Garnish : dusting of paprika
Scrub the potatoes and cut into 1 inch cubes. Place potatoes in a pan and cover with water. Add 1/2 tsp. salt. Cover and boil until tender.
Drain and let cool. Combine potatoes with chopped egg, celery, onion mayonnaise, sweet pick, salt, and pepper. Stir in a little parsley if using, then sprinkle paprika over top.
Note: I usually cook my potatoes whole and then cube them after they are cooked and cooled.
We now have a touch of Fall in the air here. Our temps have turned much cooler due to the rain we’ve had. The effects of tropical storm Gordon have made their way to Ohio. They say today we’ll be in the lower 70’s and tomorrow we’ll be in the 60’s. A big change after all the extremely hot days we’ve had. It’ll warm up a bit next week though and we’ll even see a few more 80 degree days.

The rain today is not going to dampen the celebration going on. They say that where ever you go always take along your own sunshine and I'm sure there will be lots of happy faces at the party to brighten up my day!

Thanks for publishing this recipe … I've not made potato salad in years, but it's a simple and satisfying dish, for sure.
So true that education is a gift here, I think young people need to be made aware of it, especially those who are thinking of dropping out of high school. That potato salad looks yummy!

What a little cutie pie your wee one is. Such a sweet smile! Our friend Billy cannot read or write. It really limits his world. He can only go to places he is familiar with as he is afraid of getting lost in other places. I have always been grateful for my ability to read.
