Bacon is a cured, smoked pork and has been around for centuries. Modern day Bacon was first packaged and patented by Oscar Myer in 1924. Turkey bacon has also become a healthy alternative.

They say that breakfast is the most important meal of the day. A good breakfast keeps us full throughout the morning so we’re not tempted to snack until lunch time. Breakfast gives us the sustenance to stay focused and energized. Just like any other organ in the body, the brain needs energy to work at its best.
Breakfasts here at my house can consist of toast, cereal and juice or pancakes, eggs and bacon and is one of my favorite meals of the day.
I’ve even made a breakfast casserole at times when I have a crowd to feed so I thought I’d share the recipe today. This egg casserole can be prepared in advance. You can either fix it the night before and then bake in the morning or you can bake it and reheat in the morning. It also makes a great lunch or dinner.
Bacon, Potato and Egg Casserole
Serves 10
1 pound bacon, cut into 1/2 inch strips
1 onion, diced
1 red bell pepper, diced
3 cloves garlic minced
12 large eggs
1 cup milk
3 c. frozen diced potatoes, hash browns
2 c. shredded cheddar cheese
1/2 tsp peper
1 1/2 tsp. salt
2 green onions chopped
Heat oven to 350 degrees. Grease a 9 by 13 baking dish with cooking spray.
Cook the bacon untill it is crispy brown. Drain on a paper town lined plate. Roughly chop and set aside.
Add red pepper and onion to the skillet and cook until tender . Add garlic and cook 2 more minutes
Beat the eggs and whisk in the milk. Stir in the cooked vegetables and potatoes and 1 cup of the shredded cheese. Set 3/4 cup of bacon aside and stir in the rest. Season with salt and pepper.
Pour mixture into prepared baking dish and top with remaining cup of cheese and green onions. Bake for 20 minutes so eggs start to set. Carefully add remaining bacon. Bake for an addition al 20 minutes or until eggs are firm and top is golden brown. Let stand for 10 minutes. Cut into squares and serve warm.
Yesterday started with a call to let me know that one of my uncles, the last uncle on my mother’s side of the family, passed away. I don’t know any details right now, but I will try to go to his funeral. Not a good way to start the day, but on the bright side, I believe he lived a good long and happy life.
It’s looking like we’ll be in the mid 80’s here this weekend with just a little chance of rain so it should be great for anyone with any outdoor plans. For many it’s the last weekend to enjoy swimming pools too as most of them close after Labor Day. Those that have their own to enjoy may have a little longer as these warm temps will continue through most of week too. I’ll probably be spending most of it inside in the air conditioning.

Hope you all have a wonderful Labor Day Weekend ! Be Happy and be safe!
I used to make a similar breakfast casserole - akin to what they serve at Cracker Barrel. But there are so many bacon lovers, I think I'm going to do this one next month when Tom's sister and hubby visits. Sounds like it might even be good served at supper with a salad.
