ON THE BRIGHT SIDE
The moments of our lives may be bright with possibility, dark with fear or sadness, or even plain everyday gray, but God's glory never fades. May God's glory shine into the exciting lights, upsetting darks, and boring grays of your every day.

Life is a Special Occasion!

Today is Eat a Hoagie Day which is a well known sandwich consisting of a long roll of Italian or French bread sliced length wise and filled with meats, cheese, vegetables, seasonings, sauces and more.
The hoagie is also known as a sub or grinder. The name of the sandwich originated in the city of Philadelphia. One story claims that the Italian immigrants who worked at the shipyard called Hog Island during WWI would bring giant sandwiches for lunch. The workers were soon nicknamed Hoggies, so eventually the name was associated with the large sandwiches but the spelling evolved over time. There are several other stories, but they all give credit to Philly for the hoagie name.
It’s a great day to have a hoagie for lunch !

THOUGHT FOR TODAY
Fall
The season for enjoying the fullness of life—partaking of the harvest, sharing the harvest with others, and reinvesting and saving portions of the harvest for yet another season growth.
Denis Waitley
For many years when my children would move, I’d make sub sandwiches to take along. It became known as the Moving Sub. The moves started when they were in college and continued on to some of the moves they made into their homes when they married. I no longer do this, I’m not much help moving anymore but if requested, I will still make them.
My recipe for a moving sub sandwich.
The amount can be adapted for however many people you need to feed
One long loaf french bread
Bologna, turkey, ham and salami luncheon meat.
Two kinds of cheese - American and Provolone
Sliced red onions, tomatoes and lettuce
Creamy Italian Dressing
Coat bread with Italian dressing. Layer all, meats, cheeses and vegetables alternately. Wrap up sandwiches with waxed paper and place in a plastic bag. Refrigerate overnight. The taste is better the day after making. The time allows all the flavors to meld together.
My children loved the sandwiches, but the grandchildren, not so much. Maybe that’s why they are not so popular on moving days anymore . I’d serve them with a bowl of macaroni salad and a fruit salad.
Hopefully we’ll be seeing some sunshine today. We’ve had so many cloudy days, it’s been hard to take. I feel like slowly but surely I’m going into my winter hibernation mode. But before that happens there is much to do.
Today I’m going to be making a big pot of fresh green beans, and some homemade applesauce from the apples I got at the farmers market. The hardest part of doing that is peeling the apples. Otherwise it’s very easy. Cook the apples in a small bit of water. They’ll make plenty of juice on their own. Add sugar to taste and cinnamon if you want. Cook till they fall apart and stir often. Serve warm or cold whichever you prefer.
I’m also making a chicken stir fry, trying to use up some of the onions, yellow squash and peppers that came from the farm market. I’ll be serving that over rice. I have so many fresh fruits and vegetables here that I’ve lots of cooking to be done so it doesn’t go to waste. On the bright side, a lot of it can be put in the freezer for meals later on.
I am also working on my fall bucket list and will post that on the first day of Autumn which is only a few days away now.
I hope you all have a FANTASTIC Friday!
COUNTING MY GIFTS
September days are here,
With summers best of weather,
And autumn’s best of cheer.
Helen Hunt Jackson
Counting at least 3 things every day that I'm thankful for. There is truly is always something to be thankful for.
6338. for sandwiches that make a meal
6339. for lots of fresh fruits and vegetable
6340. for much to do, it keeps me out of trouble
Enter into His courts with thanksgiving — and in His presence is fullness of Joy!
PRAYER FOR OUR TROOPS
Please pray for God's protection of
our troops and HIS wisdom for their
commanders.
Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters
and Paramedics and EMT’s
We ask this through Christ our Lord.
Amen
GOD BLESS YOU ALL!
ADVICE FOR TODAY
Summer ends, and Autumn comes, and he who would have it otherwise would have high tide aways and a full moon every night; and thus he would never know the rhythms that are the heart of life.

A little smile, a word of cheer,
A bit of love from someone dear…

I am very thankful for all the fresh vegetables and fruits we have this time of year. Yum!
My hubby has diabetes, so we don't eat hoagies as often as we used to, but I still love 'em.
I cooked up a mess of apples to go with dinner last night. It's hard to resist apples this time of year, isn't it? Time to think about apple pies...
Have a super weekend. I wish you some sunshine.
The recipes for the hoagie sandwich and the applesauce look easy to make and I'm sure are delicious. How cute with the Moving Sub! I'm sure you made a lot of them over the years with your kids!

That's interesting about the origin of hoagies! The 'moving sub' tradition sounds great; as a matter of fact, I could go for one right now!
