Today is Cinco de Mayo Day which is a holiday mainly celebrated by Mexicans, and especially the Hispanic community in the U.S. Its a time of song, dance , partying and in general a time to be proud to be of Hispanic descent.
On May 5, 1862 the Mexican army defeated the French Army at the Battle of Puebla. This single battle was the roots of Cinco de Mayo. l Today it has come to signify Hispanic and Mexican pride and a time to celebrate their rich culture.
In Spanish, it is also known as the Fifth of May.
Today is also Kentucky Derby Day.

Fiesta like
there’s no maƱana!
Although I am not of Mexican descent, I do love Mexican food and so I’ll be celebrating today. There will also be a little partying going on.
I’m traveling today as our little Lucky Guy is making his first communion. After the service at their church, we’ll be going back to their house to celebrate this joyous occasion and we’ll having some tacos in honor Cinco de Mayo.
When the babes were home we often had Spanish Rice along with our tacos so I’m sharing that recipe today in the picture above.
DS#5 is giving me a ride over to DS#6’s house today and then I’ll be staying overnight with them and traveling over to DS#3’s church tomorrow for another first communion, this time for our Little Lad. It is such special and important time in both their lives, I’m glad I will be able to be there for both of them.
I don’t drive that far myself anymore, so I’m giving a big THANK YOU to my two sons that are taking me along. I do appreciate the ride!
It’s one of those double celebration weekends for our family. Not everyone will be at both celebrations, but those that can, will be there and it’s always a party when we get together. And of course there will be cake too!

What a wonderful weekend! ..... I'm so happy for you and your family!
I've never tried making Spanish Rice, but it looks easy and a Mexican theme supper sounds good this evening, before it gets too hot. (Our temps have finally reached the 80's, but today's overcast skies and humidity make it seem cooler.)
I really like that quote from Mr. Peck. How different our nation if we chose to celebrate instead of hate.
