Today is Eat What You Want Day which is a day to ignore your diet and indulge in foods you love most. Today you can splurge. Tomorrow it’s back to the diet. While junk food is acceptable, don’t forget to include your favorite meals as well.
To celebrate Eat What You Want Day, eat all your favorite healthy and not so healthy foods, in moderation of course. Enjoy every bite!

As I have no allergies or medical conditions, I pretty much eat what I want everyday. But I do know a lot of people that avoid certain foods because they are on a diet.
One of my favorite things to eat and that I don’t have very often is Lasagna. It’s something I consider too much to make for just one. I’ll make it when I know there is a crowd to feed, but it does freeze well so there really isn’t any reason I shouldn’t make it and put the leftovers in the freezer.
So today I’m sharing my recipe. I’ve decided to make it in two smaller pans and divide the ingredients so I’ll have one to eat and one to freeze.
Although my freezer is small, it’s great for storing my leftovers. It’s hard cooking for one person and I do make good use of it.
Today is to be cooler and cloudy. I’ve a few errands to do and some shopping.

I'm more of a eat what ya want every day kinda gal. Mostly healthy, but I don't beat myself up for indulging in yumminess. One thing I miss is grapefruit. It's taboo with some of the medications I take, which of course, makes me want it all that much more. Oh well. Small price to pay, I reckon.
I made lasagna when my childhood friend visited with us last month. (Your recipe is pretty identical to mine.) Good-sized squares of the leftovers are in our freezer. Like money in the bank!
Since retiring, I've pretty much eaten everything I used to consider taboo and have actually lost a few pounds! I suppose it's true what they say about 'stress-eating' putting on the pounds.
How ironic about the lasagna! I just finished Susan's (above) new book yesterday -- where lasagna is featured predominately. Literally, it's been several decades since I had lasagna, but was thinking then (and now this morning) it might be fun to make.
I like lasagna, but you are right, Ma, it can hang around for a few days if not enough people are over to eat it. Good idea to split the recipe like you did and make 2 pans of it. We're dieting now for my niece's wedding later this year, but we do allow Friday to be our "cheat" day when we go out to eat and pick reasonable foods to eat. It helps us keep on the plan to splurge just a bit :)
