Today is Opposite Day which is a topsy, turvy day when everything you say, do, see, and hear are the opposite. If you say go left, you mean go right. If you say look up, it means look down.
Opposite Day can be a whole lot of fun. It can also be very, very confusing.

There have been many times in my life that someones has said they’d do one thing and then did the opposite. People can say one thing and mean the opposite. Things can also look one way but totally wind up the opposite. Yes, the word is full of opposites and it does make life a bit confusing for sure.
Sometimes opposites attract each other and other times they oppose each other. I guess it’s up to each of us to sort it all out. That isn’t always easy.
It’s been a dark, cloudy week here so far and chances that the sun will shine today aren’t looking very good either. I’m looking forward to some sunshine for sure, but it’s looking more and more like we’ll be making our own sunshine! I’m thinking that extra Vitamin C and D are definitely needed!

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
January is National Oatmeal Month
Oats have been used for everything from deserts to grain for animals, and is still one of the most popular breakfast menu items in the world.
I’m going to share a recipe for one of my favorite cookies today.
Soft Chewy Oatmeal Cookies
1 1/4 c softened butter
3/4 c packed brown sugar
1/2 c white sugar
1 Large Egg
1 t vanilla extract
1 1/2 c flour
1 t Baking Soda
1 t ground cinnamon
1/2 t kosher salt
1/4 t nutmeg
3 c Oats uncooked
Preheat oven to 375 degrees. In a large bowl beat margarine and sugars until thoroughly creamed. Mix in the egg and vanilla, and beat the mixture well. Then include flour, baking soda, salt, nutmeg, and cinnamon; mix well. Add in the oats and mix it up. Once it’s thoroughly mixed take round tablespoons of dough and drop them onto an ungreased cookie sheets. Then bake them for 8 to 9 minutes, and allow to cool on cookie sheets for 1 minute. Be sure to stow them covered!
Sometimes I add raisins and walnuts to the mixture as well.

It is hard when someone says something and then does the exact opposite, especially when it is life impacting. That is some of the problems we are dealing with right now, but things are slowly resolving. I do like it sunny over cloudy. We had several days of rain and clouds and I could feel myself slipping into a bit of a depressed mood. It was good to see the sun shining for the last 2 days; the weather is cool, but at least the sun is shining!

Now I am wanting some oatmeal cookies!! My favorite next to frosted sugar cookies! I won't bake any today. But then, again, it IS Opposite Day!

Since we were in the 30's this morning (YAY!), that bowl of oatmeal looks particularly yummy! In fact, every time it gets cold, all my cravings for carb-laden foods rise to the surface.
Fans of malt-o-meal, I don't recall my parents ever serving oatmeal.
