Today is Motivation and Inspiration Day which is a day about knowing yourself and focusing on who you want to become. The start of the new year is the perfect time to dedicate yourself to your goals and what you need to achieve to make your dreams come true.
The United States Congress passed a bill supporting the goals of this day in 2001 after the tragic attacks of September 11th.
Today is a great time to set goals and make plans to achieve a fruitful and successful new year.

On this 2nd day of the new year, it’s a good time for me to sit down and make some real plans for the days ahead. There is much to do as always, but I’m thinking a list will help and it will also be nice to see things get crossed off the list in the days ahead.
We all know that plans are subject to change, but then in order to get started it’s important to know just what you want to accomplish.
So today is my LIST day. I certainly need a little motivation and inspiration to get this done. I’ll start with what must be done and then move on to when I want to do it, what day to get a particular task done. After today I’ll at least have some direction.
Today’s pictures were taken a few years ago on a January day at the lake. A trip to the beach can be pretty even when it snows.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Cream Puff Day!
I’ve never made Creme Puffs from scratch, but found a recipe if you’d like to try your hand at it. This is one treat I think I’ll be purchasing from the bakery. I also like the little frozen ones found in the freezer section at the grocery store.
BASIC CREAM PUFFS
1/2 c. butter
1 c. boiling water
1 c. all purpose flour
1/4 tsp. salt
4 eggs
In a medium saucepan melt butter in the boiling water. Add flour and salt all at once. Stir vigorously by hand until the flour is well blended.
Cook and stir flour mixture over medium heat until the mixture forms a smooth ball that holds together and doesn't separate. Remove from heat and cool for 10 minutes. This short cooling period prevents the eggs form cooking before they can be blended into the batter.
Add the eggs, one at a time, to the batter, beating vigorously about 1 minute until smooth after each addition. When beating is complete, batter should appear smooth and thick, and be slightly sticky to the touch.
Drop batter by heaping tablespoons onto a greased baking sheet, using about 1/4 cup batter for each. Space puffs about 3 inches apart. A rubber spatula can be used to push the sticky batter from the spoon.
Bake puffs at 400 degrees for 30 to 35 minutes or until golden brown and puffy. Remove puffs from oven. With serrated knife, split puffs in half horizontally, removing any soft dough inside. Cool thoroughly on wire rack. Fill with pudding and Cool Whip or ice cream.

How pretty with the pictures of the lake in the wintertime! Good idea to make a list, Ma. I know it is always satisfying to cross items as they get done and to finally reach the end with all items crossed out.

... and yes, I think I've always carried of list of some sort with me, wherever I go.
There's so much in flux right now, I appreciate your acknowledging things are always subject to change. :)
Once when I was 15(16?) we made creme puffs from scratch in Home Economics. So impressed, I couldn't wait to make a batch for my parents. Well, 'til the end of her life, mother remembered those being the "best they'd ever tasted." For the life of me I don't know why I never made them again.
I have been working on becoming motivated today. Deciding what I want to do in 2017. And how I want to start! I'm such a list maker too! And then I promptly never look at it again!!
I tend to get things done better when I make a list.
Now...where did I put that list?

I like cream puffs, but always bought them at the store I never thought I could make them. I just might use your recipe and try. I don't ever make a list I just do when the time and notion takes a hold. (smile). It has been raining here ever since Saturday now I'm ready for some sunshine. I'm hoping for cooler weather.
