Today is Martin Luther King Day. Born on January 15, 1929, Martin Luther King Jr. grew to become one of the greatest Social Activists the world has ever known. At 35, he became the youngest person to win the Nobel Peace prize. He was assassinated on April 4, 1968 while making a speech from the balcony of his hotel room in Memphis, Tennessee.
His birthday became a National Holiday by an act of Congress in 1983. Many consider it a day to serve your community.

For many this is a 3 day weekend with children off school and many government offices and banks will be closed today due to the holiday. Here life goes on as usual.
Today I need to do a little shopping and and it looks like we’ll have a good day to be out and about.. I’m always thankful for an ordinary day.
We need to remember though that even ordinary days can become extraordinary ones by the way we act and treat each other. A simple smile, a hug, an encouraging word can often make someones day better.
The good we do today can last a lifetime.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is International Hot and Spicy Food Day!
They say that variety is truly the spice of life and there seems to be no end to the variety of hot and spice foods we can prepare. Hot foods can actually be very good for you because of their medicinal and antimicrobial properties. Garlic, chilies, onions, allspice, and oregano all kill bacteria and make food safer to consume.
I found this recipe to share today but it’s doubtful that I’ll try it the hot and spicy way. When it comes to spicy things, I like mine on the mild side.
HOT SPICY CHICKEN WINGS
1 pound chicken wings
1 8 oz can tomato sauce
1/2 teaspoon garlic powder
1 teaspoon onion powder
3 to 4 tablespoons Tabasco or hot sauce
2 tablespoon red pepper flakes
2 tablespoon jalapeno peppers, chopped
Preheat oven to 350 degrees. Combine tomato sauce, seasonings, peppers in bowl. Dip wings in sauce and place on a greased baking sheet. Bake for 20 minutes, basting occasionally with sauce till wings are cooked through.
COUNTING MY GIFTS
I still have a dream today that one day war will come to an end, that men will beat their swords into plowshares and their spears into pruning hooks, that nations will no longer rise up against nations, neither will they study war any more.

Counting at least 3 things every day that I'm thankful for. There is truly is always something to be thankful for.

Those spicy wings look interesting. I bet my son would like them! No day off here, but hubby did say the morning commute was a little lighter this morning, so plenty others must be enjoying the 3 day weekend :)
So true each day can be extraordinary. We just have to look out for it and be grateful when we see it!

How I remember hearing the news of MLK's assassination! .. and then, just a couple months later, Bobby Kennedy. Quite the wake-up call for a green-behind-the-ears high school senior!
I would LOVE those spicy chicken wings! (If someone else would make them, that is!)
