67 DAYS UNTIL SPRING

Life is a Special Occasion!

Today is Pharmacist Day which implores us to take a moment to think of all the people who work as pharmacists. They only see us when we’re sick with a cold, cough, measles or when we’ve run out of toothpaste. These poor folks help us to feel better, and only ever see us at our worst.
A Pharmacist must be knowledgeable of the chemistry of all medicines. They can inform you of a drugs' side effects, and all aspects of prescription medicine. Very importantly, they understand and recognize the inter-action of drugs together.
National Pharmacist Day recognizes this important role. If you are in the pharmacy today, make sure to wish your pharmacist a good day.
If you can't see the Bright Side, polish the dull side
THOUGHT FOR TODAY
Cheerfulness is the best promoter of health and is as friendly to the mind as to the body.
Joseph Addison
I’m trying to do a bit of catching up here this morning as I was gone for a day to attend the funeral of one of my dearest aunts. Now I’m home and a bit tired but very thankful I had the opportunity to go.
Today’s pharmacies have just about everything in them than one could possibly need. I don’t take any prescriptions for medication but I have gone to our local pharmacy for my flu shot in the past. They say there is a stomach flu virus of some kind going around right now and hopefully I’m protected and won’t be catching it.
It’s been terribly rainy here the past few days. Warmer with temps in the 50’s but wet, very wet. The drive home yesterday was a miserable one and I’m thankful for my BIL who did a good job of getting us home safely.
It’s to get colder though as the day progresses and we’ll be back in the 30’s tonight. Hope you all stay dry, warm and healthy!
I hope you all have a GREAT day. Happy Thursday!
WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is Marzipan Day!
Marzipan, a delicious and light treat made of a fairly unusual combination of sugar and almond meal, often accented with almond extract. It has been used in all varieties of sweets and treats, and manages to be both kosher and appropriate for Lent. Its excellent mutability makes it popular for themed cakes and confections, as it can be molded into just about anything.
Towering cakes have been made, encased in a marzipan wrap or even thin marzipan outer wraps filled with all manner of fruit and creams. Today’s recipe is one I’ve not made but sounds quite a wonderful way to celebrate marzipan.
MARZIPAN LAYERS
LAYER ONE:
1/2 c. butter
1/3 c. sugar
1 egg yolk (lg. egg)
1/4 c. milk
1/2 tsp. vanilla
1/2 tsp. baking soda
2 c. flour
Cream butter and sugar. Mix egg yolk, milk and vanilla together. Sift flour and baking soda together. Combine liquids alternately with dry ingredients to creamed mixture. Spread dough into buttered 9 x 13 inch pan. Press and chill until firm.
LAYER TWO:
1 c. raspberry jam
LAYER THREE:
1 unbeaten egg white
3/4 c. almond paste (1/2 lb.)
1/3 c. sugar
3 tbsp. butter, softened
3 eggs
1 tsp. vanilla
Green food coloring, if desired, a drop or so
Cream almond paste and egg white together with an electric mixer or food processor. Add sugar slowly, then butter, vanilla and the eggs one at a time. Beat all together until very smooth. Add just enough food coloring (if desired) to achieve a pale green tint. Spread almond paste mixture over jam-colored dough. Bake 30-35 minutes in 350 degree oven. Cool and spread with layer four.
LAYER FOUR:
2 sq. chocolate, unsweetened melted
3 tbsp. cream
1 tbsp. butter
1 tsp. vanilla
2 c. powdered sugar

I am sorry for your loss but glad you had a safe trip.
The pharmacist sometimes gives better advice than the doctor. lol
My grandson is a pharmacist, give them credit for hard work and lots of schooling.
Your recipe is better than my Thursday one.
So sorry for your loss. The older we get it seems the more funerals we attend! I have worked with some great pharmacists over the years. I'm glad we have a day to honor them!
Pharmacists are amazing, indeed! We're actually more prone to consult our pharmacist than an M.D. (Well, as a matter of fact I did just that a few months back when I developed an allergic reaction.)
And ethical! Long story, but my BF Debbie has had to be on opiates(?) for years to manage her pain. The state of Florida has now passed laws making it almost impossible for her doctors to continue prescribing what she needs, just to function. Ironic, but her niece is a pharmacist practicing only a few miles from her home. So close and yet, so far. Were I in Amy's shoes, that would be a tough dilemma.
Isn't marzipan amazing? I'm not usually drawn to sweets, but just cave to that almond goodness.
So sorry to read of your Aunt Pam. Glad that you were able to get to the funeral and back safely. Over here they call Pharmacists Chemists, and they are able to dispense a lot of health help rather than going to the Doctor. We have a lovely drugstore/chemist not too far from us which is also a post office. That cake looks amazing. I adore marzipan! xoxo
