Today is National Hugging Day! What a great day! This is an opportunity to give and to receive. Give a hug, and you automatically receive one in return.
Hugs are loving. Hugs are therapeutic. Hugs are caring. Hugs are celebratory. Hugs make you feel good inside. A hug is a way to say everything is, or will be okay.

I love getting and giving hugs and thanks to my large and wonderful family I have plenty of opportunities to do so. While I do not always get the recommended daily amount, there are times that I get more so all in all it balances out.
This weekend is one of those where I’ll be getting more hugs than usual as I’ll be spending a little time with DS#6 and his family to help celebrate his birthday. His actual birthday was yesterday, but it’s ok to celebrate for more than just one day.
We are having truly Spring like weather with temps approaching 60 today. But not to worry, winter isn’t over and I saw in the long range forecast that colder weather will be returning this coming week. Not that I was worried. Ha!

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is Granola Bar Day
Nutritious, yummy granola is typically based on rolled oats full of proteins and useful fibers. It’s been an increasingly popular type of breakfast food since the 19th century, but wasn’t compressed into a snack bar before the 1970’s. To produce a firm bar, granola is bonded with honey, butter or syrups, and it is then baked. The exception are so called chewy granola bars which are either briefly baked or completely raw.
The beauty of making homemade granola bars is that you can add different nut, grains and cereals.
Granola Bars
6 cups Rolled Oats
4 Tablespoons Butter, Melted, Plus More For Greasing
1/4 cup Vegetable Or Canola Oil
1 teaspoon Salt
1 cup Brown Sugar
1/2 cup Honey
1/4 cup Apple Juice
1/4 cup Molasses
3 teaspoons Vanilla Extract
1 1/2 cup Rice Krispies
1 cup Wheat Germ
1/2 cup Finely Chopped Pecans
1/4 cup Roughly Chopped Almonds
8 ounces, Milk Chocolate Or Chocolate Almond Bark, Melted
Preheat the oven to 350 degrees.
In a bowl, toss the oats with the canola oil, melted butter and salt. Spread the mixture out on 2 baking sheets and toast in the oven for 15 to 20 minutes, shaking the pan twice and making sure they don't burn. Remove from the oven and set aside. Reduce the heat to 325 degrees F.
In a medium saucepan, combine the brown sugar, honey, apple juice and molasses. Heat the mixture slowly, stirring until all combined. Stir in the vanilla.
Toss together the toasted oats, rice cereal, wheat germ, pecans and almonds. Pour in the sugar mixture, stirring as you pour. Toss to combine; it will be sticky!
Press into 1 baking sheet that has been thoroughly greased with butter, or line pan with foil and grease foil, and bake until golden, about 20 to 25 minutes. Remove from oven and let cool. Cut pieces with a sharp knife and remove from the pan.
Optional: Dip the cooled granola bars straight into the melted chocolate so that the top is plain and the bottom is chocolate covered. Set on parchment until set, sticking in the fridge to hasten this along if necessary.
Makes approximately 16 servings
