Life is a Special Occasion!
Hallmark
Today is Make Your Dream Come True Day which gives us the opportunity to do something to realize our goals and dreams. Whatever your dreams are, they usually don't come true without some effort on your part. So, today is the perfect opportunity to do something about it.
On this day do something, anything, to move in the direction of achieving your dreams. Sure, sometimes it takes several steps to accomplish them. So view today as a time to get started on them. With a little effort, they will come true!
If you can't see the Bright Side, polish the dull side
THOUGHT FOR TODAY
Don’t let the fear of the time it will take to accomplish something stand in the way of your doing it. The time will pass anyway; we might just as well put that passing time to the best possible use
Earl Nightingale
There are lots of ways you can go about making one of your dreams come true, but the first step is to have a general plan. After that we need to focus and do what’s necessary.
Without a plan, our chances of getting to the correct destination safely and on time, are slim. In order to achieve our goal we must prepare
Well much of what we plan here in northern Ohio is weather related. I usually check the weather early on so I can find out how cold it will be or what the road conditions will be like.
Today they say 26 degrees for a high with zero percent of participation and maybe we’ll even see the sun peek through.
I hope you all have a FANTASTIC Friday!
WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
Today is Peach Melba Day!
The classic dessert Peach Melba was created for and named after the very slim opera singer Nellie Melba. When Nellie gained weight later in life, the same chef that created Peach Melba created a thin, low calorie toast for her breakfast, Melba Toast!
Peach Melba is sliced, fresh peaches in a raspberry sauce sweetened with icing sugar and is usually served with vanilla ice cream. It’s a noteworthy and delicious pudding and well worth singing its praises on Peach Melba Day, even though not an opera singer!
PEACH MELBA BREAD PUDDING WITH RASPBERRY SAUCE
8 ounces cream cheese
2/3 cup granulated sugar
4 eggs
1 cup milk
1/2 teaspoon almond extract
1 teaspoon grated lemon peel
1 teaspoon vanilla extract
3 1/2 cups dry bread cubes
1 can, 29 ounce size, peach halves
3 tablespoons seedless raspberry jam
4 teaspoons granulated sugar
1/4 teaspoon ground cinnamon
1/4 cup sliced almonds
Raspberry Sauce
1 package, 10 ounce size, frozen red raspberries, thawed
2 tablespoons granulated sugar
2 teaspoons cornstarch
1 tablespoon seedless raspberry jam
1 teaspoon lemon juice
Preheat oven to 325 degrees. In a mixer bowl, beat cream cheese and the 2/3 cup sugar with an electric mixer on medium speed until smooth. Add eggs and beat until blended.
On low speed, beat in milk, almond extract, lemon peel and vanilla extract. Place bread cubes in a greased 12 by 7 1/2 by 2 inch baking dish and pour egg mixture atop.
Place peach halves, cut side up, atop egg mixture Spoon 1 teaspoon jam into each peach center. Combine remaining sugar and cinnamon; sprinkle over peaches. Top with almonds. Bake for 40 to 45 minutes or until set. Cool slightly.
Serve warm with Raspberry Sauce or with whipped cream or vanilla ice cream.
For Raspberry Sauce
Sieve raspberries to remove seeds and discard. In a small saucepan, combine sugar and cornstarch. Add raspberries. Cook and stir until thickened and bubbly. Cook 1 minute more. Remove from heat. Stir in raspberry jam and lemon juice.

So true to make dreams come true, one has to have a plan and by working the plan, the dreams can become true indeed! Brrr with the cold, but at least no snow is accompanying it!
betty
Ironic. Until the last few years I wouldn't have set foot outside my front door w/o a Plan. (Yes, sometimes I carried that rigidity to the extreme.)
Unfortunately, due to present circumstances out of our control, I feel so frustrated ... treading water in place. It's good to be reminded (that) even small steps can make a difference.
You know, you can make that sauce by itself and serve it over vanilla ice cream. It is so good!!
Now I know why I can't get things done, I need a plan!!
Have a great weekend!
Love the idea of making your dreams come true day Pam! as you know I am a great day dreamer! You got to have a dream in order to make a dream come true! That pudding looks fabulous. Yum! Hope you have a lovely Saturday. Stay warm and safe! Thanks so much for all that you share with us. I think you are a treasure dear lady! xoxo
