Today is Pack Rat Day. We’re all a little bit materialistic, and tend to buy, own and hoard more stuff than we might really need. Pack Rat Day encourages us to embrace the fact that we want to keep stuff, and suggests that you shouldn’t throw your old belongings or clothes away as it may be useful or valuable in days or years to come.

I'm a selective pack rat. There's some things I have no problem getting rid of and others I hold onto dearly.

Pack rat is the term used to describe a person who tends to collect objects both useful and useless, and does not easily get rid of them. While many of us can be pack rats in certain areas of our lives, being a hoarder can be a serious issue. In many people the pack rat behavior can create major mental and physical health issues.
The term pack rat comes from the rodent of the same name. Also called woodrats, these rodents are known to be nesters. They collect anything they can find to make their nests. They are known to get distracted by shiny new things. If they see something they like, they will drop what they are currently holding to get the shiny new item for their nest.
I am not a hoarder, but am definitely a saver. I have way more than I need here at my house. Over the years I’ve collected a huge amount of things and since I retired, I have been slowly giving away or throwing away things that I no longer need. I have made a lot of progress, but there is still room for improvement.
Every bit of storage space is full to overflowing. Sorting out the good from the bad and the ugly is not an easy job and more than not my energy level is on the down side. Slowly but surely they say the turtle will win the race. Ha!

It’s World Baking Day
Crunchy cookies, chewy brownies, decadent tortes, cute cupcakes, crusty baked bread…baking is an art this world would just not be the same without.
Most of us think of cakes and cookies when it comes to baking but we bake lots of other things too. Recently DD gave me some huge Vidalia Onions and I looked for a recipe to make baked onion rings instead of deep frying them and this is what I found.
Crispy Baked Onion Rings
They are crispy on the outside, tender on the inside without getting soggy.
2 large Vidalia onions
3/4 cup flour
4 large egg whites
2 Tablespoons mayonnaise
1 1/2 cups breadcrumbs
Cooking spray
Preheat oven to 425F. Spray baking sheet with cooking spray.
Slice the onions into 1/2-inch wide rings then place the rings in a bowl of water.
In a medium bowl, whisk together the flour, 1 teaspoon salt and 1/4 teaspoon pepper. In a second medium bowl, whisk together the egg whites and the mayonnaise. Add the breadcrumbs to a third medium bowl.
Remove each onion ring from the water, shaking off any excess and then placing it immediately into the flour, tossing until it’s thoroughly coated. Next, dip the onion ring into the egg white mixture until it’s thoroughly coated and then into the breadcrumbs, pressing them firmly onto all sides of the onion ring. Place the onion ring on the prepared baking sheet and repeat the coating process with the remaining onion rings.
Throughly spray the onion rings with cooking spray. This is optional, but it helps them brown more evenly. Bake the onion rings for 10 minutes then flip them once and bake an additional 5 minutes until they’re golden brown and crispy. Serve immediately with your favorite dipping sauce.

Those onion rings look good! I found with our last move I had plenty of thingd we didn't need so we made several trips to Goodwill. Always good to have more room though after getting rid of things no longer used.

I have a lot of things in my house that I need to get rid of. I keep thinking about a garage sale. My husband was a real pack rat. Especially things in the garage! The recipe sounds yummy. I love onion rings!!
