THOUGHT FOR TODAY
This special couple lives pretty far away so as usual my anniversary wishes went out to them in the mail. Needless to say, I love and miss them very much!
Today is also International Migratory Bird Day which is always observed on the second Saturday in May. It seems impossible that the 2nd Saturday of this month is here already and that tomorrow is the 3rd Sunday.
People love birds. Bird watching is a favorite pastime of millions of people. It is the most popular of hobbies, and can be enjoyed by everyone regardless of age. International Migratory Bird Day celebrates the incredible journey that migratory birds take each year. They travel thousands of miles between breeding grounds in North America, and their winter homes in Central and South America.
I’ve not seen any hummingbirds here yet, but they should be migrating our way. It’s always wonderful to see them at the feeder.

WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Buttermilk Biscuit Day!
2 cups flour, not self rising
¼ teaspoon baking soda
1 tablespoon baking powder
teaspoon salt
6 tablespoons unsalted butter, cold
1 cup buttermilk
In a large mixing bowl, combine the flour, baking soda, baking powder and salt. Cut in the butter and mix until it resembles coarse meal. Pour in the buttermilk. Mix lightly until moist. Turn out the dough onto a floured surface. Pat down to ½ inch thick. Cut out circles using a 2 inch cookie cutter or rim of a glass. Gently knead the rest of the dough, mixing it as little as possible to avoid having tough biscuits. Place the cut rounds on a baking sheet. Bake in a preheated oven at 450 degrees F for 10 to 12 minutes. Do not overbake. The biscuits should turn a pale golden brown. Remove from the oven and serve immediately. Makes 10 buttermilk biscuits.

Happy anniversary to your son and daughter in law! It is fun to watch the birds come back after the winter season, though down here I don't think they ever leave! Might just have to get a buttermilk biscuit today!
