28 DAYS UNTIL SUMMER
Sunrise: 6:02 am

Life is a Special Occasion!
Hallmark
It’s Lucky Penny Day. Perhaps a Lucky Penny will be lucky for you today.
Taken at face value, a penny doesn't buy you much, if anything. It used to. During your parents and grandparents days, a penny bought a lot of things. Inflation year after year after year, eroded the penny's value. There has even been some discussion as to whether to discontinue the penny.
The penny still serves a very useful purpose, at least some of them are lucky pennies. Lucky pennies are found on the ground. Not all of the pennies you find will be lucky. But, it will only take one lucky penny used to scratch off the mega winner on a a scratch off ticket.
Remember: A penny saved is a penny earned.
If you can't see the Bright Side, polish the dull side
THOUGHT FOR TODAY
A penny for your thoughts.
It could be your lucky day if you find a lucky penny on the ground, like this proverb tells you: See a penny, pick it up. All day long you'll have good luck. Give a penny to a friend and your luck will never end. If you are superstitious be careful to only pick up pennies lying face up. Well whether you believe it or not that you'll be lucky all day, but you already had to be lucky to find that little penny on the ground after all.
This past weekend was a busy one and I had a great time with all the celebrations, but it’s Monday morning once again and time to get back in the usual day to day way of things here at my house. The good news is that the week ahead is to be warmer here and hopefully, mostly sunny too.
There is lots to do inside and out and I want to be outside more than in. We’ll see...
I hope you all have a GREAT start to this new week. Happy Monday !
WHAT’S NEW IN THE KITCHEN
There is a food holiday to celebrate every day of the year!
It’s National Taffy Day!
Taffy is a sweet treat made from boiling together sugar, corn syrup, water, butter, with flavorings and colorings. The mixture is then pulled and stretched and folded back over itself, and then re-stretched again until it is fluffy. Salt water taffy is the most common taffy, which originated in Atlantic City. It is called such because it originally contained a small amount of salt water in the mixture.
Taffy always reminds me of the county fair or trips to amusement parks. They always have stands where they sell Taffy. I’ve never made any but I have eaten plenty.
Soft Taffy
2 cups sugar
1 1/2 cup corn syrup
1/4 teaspoon salt
1 tablespoon vinegar
1 teaspoon vanilla extract
1/2 cup whipping cream
butter
powdered sugar
Cook ingredients over medium heat in a large pan until sugar dissolves. Add whipping cream to mixture and cook to firm ball stage.
Pour onto a buttered plate and cool until cool enough to handle.
Butter hands and pull taffy until it loses its glossy color. Cut with scissors and roll in powdered sugar. Wrap pieces in wax paper.
COUNTING MY GIFTS
A penny is a lot of money, if you have not got a penny.
Yiddish Proverb
Counting at least 3 things every day that I'm thankful for. There is truly is always something to be thankful for.
3883. for pennies, they do add up
3884. for fairs and amusement parks, lots of good things to eat there
3885. for a normal day ahead, they are the best
Enter into His courts with thanksgiving — and in His presence is fullness of Joy!
PRAYER FOR OUR TROOPS
Please pray for God's protection of
our troops and HIS wisdom for their
commanders.
Almighty and eternal God,
Protect our military
as they discharge their duties
with the shield of your strength,
may the power of your love
enable them to return home in safety
that with all who love them
they may ever praise you for your loving care.
AND bless our Police Officers, Firefighters
and Paramedics and EMT’s
We ask this through Christ our Lord.
Amen
GOD BLESS YOU ALL!
ADVICE FOR TODAY
If it's a penny for your thoughts and you put in your two cents worth, then someone, somewhere is making a penny.

A little smile, a word of cheer,
A bit of love from someone dear…

I like taffy from the fair; would always have to buy a bag of the salt water ones available there.
It is fun to see a penny on the ground; these days I do leave them there in case a child discovers it :)
Glad to hear it is warming up a bit for you; I know lots of people in that part of the country getting tired of all the rain hitting their way.
betty
We are one of those people who are getting lots of rain. And it is cool! I am ready for summer! I can remember how exciting it was to find a penny on the ground. A penny used to buy a lot of candy at the little corner store. All that candy in all those jars. Oh the good old days!!
If you cannot see the bright side...polish the dull side...what a great metaphor for life :) saw you on Rick's blog and decided to come over and visit. I like your place and I think I will stick around :) now following.
