It’s National Sugar Cookie Day! Today, we celebrate a cookie that is seemingly simple, but totally delicious. Traditional sugar cookie recipes call for just six ingredients: sugar, flour, butter, eggs, vanilla, and baking powder.
Although sugar cookies are sometimes though of as plain, there is more than meets the eye. Use cookie cutters to create shaped sugar cookies, and top them with frosting or sprinkles. You can also make cookie sandwiches with two sugar cookies and fillings like marshmallow, melted chocolate, or jam.
To celebrate National Sugar Cookie Day, make a batch of homemade sugar cookies and enjoy !

Since I’m not turning on the oven much at all this summer I decided to see if there was a no bake sugar cookie recipe out there. Sure enough there was so I’m sharing it with you all today. I haven’t tried it out but it does sound good.
No Bake Sugar Cookie Bites
3/4 cup + 2 tablespoons butter, softened
2/3 cup white sugar
1 teaspoon vanilla extract
1/8 - 1/4 teaspoon almond extract
1 and 2/3 cup white flour
1 tablespoon sugar sprinkles
Additional sprinkles for decorating
In a large bowl, beat together slightly softened butter with the white sugar until well combined and to a light consistency.
Beat in the vanilla and almond extract. These extracts are key for the taste and flavor of these bites so do not omit and feel free to scale to the taste preference.
Beat in the flour until well combined with the other ingredients. Depending on how you measured your flour , you may need a few more tablespoons of softened butter. Alternatively you could also need a bit more flour if they are too wet.
Stir in the sugar sprinkles and then roll into balls. Roll the balls into more sprinkles to decorate if desired,
Thankfully there are bakeries doing my baking for me this summer. I do love my sweets but it’s not worth turning the oven on here so I buy them.

I do enjoy a sugar cookie now and then :) Growing up, my mom would make a lot of them during Christmastime with lots of different cookie cutter shapes and decorations, yum!
