Today is Corn Fritters Day. It's a celebration of comfort food and simple cooking. With some corn, egg, flour, milk, and melted butter, anyone can throw together a batch of these side dish favorites. With some creativity, you can add your own favorite ingredients to spice them up or create your very own tasty corn fritter .

I wasn't born on a farm, but I got here as fast as I could!
I do get out in the country when I can. I visit the farmers road side stands. This time of year there is plenty of corn to be had and many of us look for different ways to use it up while we have plenty of it and making some corn fritters is an easy way to do it.
I looked to see if I could find a recipe for some different variation on the basic corn fritter and this is what I found.
3/4 cups All purpose Flour
1 Tablespoon Sugar
1 teaspoon Baking Powder
2 whole Eggs
1/2 cup Milk, More To Thin If Necessary
1 teaspoon Kosher Salt
1/2 teaspoon Cayenne Pepper
4 cups Corn Kernels: Fresh, Frozen, Or Canned
3 teaspoons Chopped Fresh Chives
Canola Oil, For Frying
Powdered Sugar, optional
Maple Syrup optional
Mix flour, sugar, and baking powder. Add eggs, milk, salt, and cayenne pepper. Stir together to make a batter. Add corn and chives to batter. Fold together to combine.
Heat canola oil to 365 degrees. When oil is heated, drop spoonfuls of batter and cook, flipping to the other side, until golden brown. Drain on a towellined plate. Serve alone, with dipping sauces, or sprinkled with powdered sugar or drizzled with maple syrup.
I also found this recipe for baked corn fritters.
2 tbsp. olive oil
1 small onion, peeled and diced
1 clove garlic, peeled and minced
1 can, 15 oz., corn kernels, drained
1/2 cup milk
1 egg
2 tbsp. chopped scallions or chives
1/4 cup grated Parmesan cheese
1/2 cup cornmeal
1/2 cup all purpose flour
salt and pepper, to taste
Preheat oven to 350 degrees. Add 1 tbsp. of oil with the chopped onion and garlic to a pan. Saute on medium low heat for a few minutes, until the onions are soft. Add corn. Remove from heat to cool.
In a bowl whisk together the milk, egg, chives, and cheese. Add cooled corn mixture to the bowl with the milk mixture. Then mix in the cornmeal, flour, salt, and pepper.
Line a baking sheet with parchment paper and spread 1 tbsp. olive oil over the surface. Form the batter into flat, circular patties and lay them on the prepared baking sheet. Bake 20 minutes then flip them over and bake an additional 20 minutes, until a light golden brown. Serve warm as a delicious side dish. Makes approximately 8 fritters
Here in Ohio we do have a lot of corn fields and that is what the pictures are of today. I love taking a ride in the country.

There is nothing like good farm grown food at roadside stands. I am blessed to love veggies and I cook them whenever possible.

I don't think I have ever had corn fritters, but I do like corn, especially BBQ corn. I was surprised when we were down in Phoenix over the 4th of July to drive by a corn field with already ripe corn. I didn't quite picture that in the big city.
