July 19th, National Raspberry Cake Day, makes today as sweet as a summer day can be. Tender raspberries are among the best of fruits that nature has to offer. Put them into a cake and then, you can have your fruit and eat it, too!
Raspberries are one of summers sweet, fruity treats. And, the harvest is going on right now. So, it's only appropriate that we enjoy a piece of raspberry cake in celebration of the harvest.

A taste of summer…
This time of year is just wonderful for enjoying fresh fruits. Raspberries are something I don’ t have often but when they are fresh and in season, I can’t help but indulge. I can foresee another trip to roadside stands in my future.
This weekend we’ve become very hot and steamy here and anything cool and refreshing is needed. So I’m thinking any desserts I have will not need baking.
On the bright side there are plenty of offerings that don’t need it.
I found this one for No Bake Raspberry Lemon Bars that sounds pretty refreshing.
2 pkg. fresh raspberries, about 2 1/2 cups, divided
6 graham crackers, crushed, about 1 cup
2 Tbsp. butter or margarine, melted
2 pkg., 8 oz. each, Cream Cheese, softened
1 jar, 7 oz., Marshmallow Creme
Tbsp. lemon juice
Reserve 20 raspberries for garnish; refrigerate until ready to use. Mix graham crumbs and butter until well blended; press onto bottom of 9-inch square pan. Refrigerate until ready to use.
Beat cream cheese, marshmallow creme and lemon juice with mixer until light and fluffy. Stir in remaining raspberries; spread over crust.
Refrigerate 4 hours. Top with reserved raspberries just before serving.
It’s the 3rd Sunday of the month so I’ll be fixing dinner for those in my family that can come. The air conditioning will be on to keep us cool and comfortable. Rain is expected too, hopefully cooling us down a bit on the outside.

Raspberries are so refreshing! It is neat you can find them from roadside stands where you live :) We are enjoying some much needed rain here with cooler temps for a few days :)

I can't recall the last time I tasted a raspberry! We, too, look for recipes that don't involve turning on the stove-top or the oven.
