July 6th is National Fried Chicken Day. It is day to enjoy crisp and tasty, finger licking good fried chicken.
Fried chicken is one of America's favorite meals. Sure, we all know that fried foods are not good for us. But, fried chicken tastes oh so good. We just can't resist having it on a regular basis.
There's just one thing you need to do celebrate this day: Eat some fried chicken. You can have it for lunch, dinner or cold leftovers as a snack. Better still, have it for lunch, dinner, AND for a snack.

One of my favorite ways to make fried chicken is to do it in the oven. Oven fried chicken is easy to make and delicious. For years I had to make dinner for a large family so I often looked for recipes that made lots and took less effort and this is one I made often. Then I used to cut up a whole chicken but now usually use frozen chicken breasts.
3 chicken breasts, cut in strips
4 to 5 tbsp butter, I use vegetable oil instead
1 cup flour
½ tsp salt
1 tbsp seasoning salt
½ tsp pepper
2 tsp paprika
Preheat oven to 400 degrees F. Place butter on a large baking sheet and place in the oven to melt.
Combine all ingredients besides chicken and butter in a large paper or ziploc bag. Add the chicken and shake to coat. Take your baking sheet out of the oven once the butter has melted and place your chicken on it, leaving a space between each strip. Bake 10 to 12 minutes, flip gently with a pair of tongs, and bake another 10 to 12 minutes.
Be sure to check to make sure your chicken is cooked, as the thickness can greatly affect baking time. You want it to be done but not overdone and dry. Bake another 5 to 10 minutes if needed. Remove to a plate lined with paper towel to soak up any excess grease. Serve immediately.
Makes 3 to 6 servings depending on the amount of chicken used.
I love cold fried chicken too. It’s great to have on hand for sandwiches or salads or even to take on picnics.

I did see that it was National Fried Chicken day today. It is always so yummy! My mom would fry her chicken and then put it in the oven for about 15 minutes at 350 degrees to bake it a bit. Very moist and delicious! I am going to make your recipe after it cooks down a bit and we start using the oven again.

Love the recipe Pam! I always do oven fried also. I am not sure it's that much healthier than the fried kind, but who cares! It's delicious! I do treat myself to KFC every now and again. I think they must put something in it which makes you crave it every now and again. Oddly enough when I am eating it, it somehow never tastes as good as what I anticipated. Maybe I am just wierd!
