July 17th is Peach Ice Cream Day. Its a cool, peachy keen day. Peaches are one of the best flavors of the summer season. People wait for about 48 weeks for the peach harvest to ripen. And, when it does, for a few short weeks, its peach everything! In celebration of the harvest, the ice cream companies make peach ice cream. Its hard to find other times of the year. Most major ice cream makers only produce it during the summer.
Peach Ice cream is the way to go today. Enjoy it on an ice cream cone, in an ice cream soda, in a sundae, or simply in a dish.

It’s a peach of a day!
Among the many things that I got at the farmers market last week was fresh peaches. They were on the small side but none the less very delicious. I also got some cantaloupe and cherries. I cut them up and made a fruit salad and ate it for a few days. Fresh anything is always better and there is no doubt about it. They were ! I didn’t make ice cream but I did enjoy my mixed fruit on top of some I had in the freezer.
I found this recipe for a Peaches and Cream Dessert to share. I haven’t tried it yet but it is one I’ll keep for sure.
PEACHES AND CREAM DESSERT
3/4 c. flour
1 regular vanilla pudding mix, 3 1/2 oz.
1 tsp. baking powder
1 egg, beaten
1/2 c. milk
3 tbsp. butter, melted
1 can peach slices, 16 oz
1 package cream cheese, 8 oz
1/2 c. sugar
1 tbsp. sugar
1/2 tbsp. cinnamon
Stir together flour, pudding mix and baking powder. Combine egg, milk and melted butter. Add to dry ingredients. Mix well and spread in greased 8 x 8 x 2 pan. Drain peaches, reserving 1/2 cup liquid.
Chop peaches and sprinkle on top of batter. Beat together cream cheese, 1/2 cup sugar and reserved peach liquid. Pour on top peaches. Combine 1 tablespoon sugar and cinnamon. Sprinkle over all. Bake at 350 degrees for 45 minutes and cool.
Of course I’m not turning on the oven here yet. It’s to be a hot weekend.

Now I know why I got a peach ice cream recipe today from a site that sends me recipes, seeing how it is Peaches Day. I love fresh peaches, so refreshing on hot summer days :) I remember my mom worked for a lady years ago that had several peach trees. During summer my mom would come home with bags of peaches from the trees. We had so much fun making pies, putting the peaches over ice cream, etc. Always delicious!

When my dad was alive, I would bake him a fresh peach pie and bring it to him at work every summer. It would be warm, out of the oven....his favorite pie. I miss those days.
