Today I have a family birthday party to attend for our little X factor who will be 3, so I’m sure there will be a little brother bonding going on. I don’t have any brothers myself, but do have 6 sons who are very close to each other and a daughter that loves her brothers. They may be separated by time and distance for the most part but when they get together, it’s like they were never apart. No family gathering would be complete without a hashing over family memories of fun times gone by.
Today’s pictures are of a few that I found in my photo album of some of the brothers and their sister together.
Our weather has turned warmer after some really chilly days, we are to be in the 70’s today. So it will be a great day for an outdoor birthday party.
I was inspired by a blog that I read to make some things to have on hand for this weekend so I wouldn’t have to cook anything. So yesterday I got that done and now I’ll not have to cook anything the rest of the weekend. One of the things I made was Loaded Redskin Potato Salad and it is good so I thought I’d share the recipe
I made a few variations so the recipe below shows the way I made it.
1 ½ lbs. Red Potatoes, boiled and then cut into 1/2 inch chunks. Peel half of the potatoes, leave skin on other half
1/2 package Ranch Dip Mix
¾ c. Sour Cream
¼ c. Mayonaise
½ tsp. Garlic, minced
½ tsp. Ground Pepper
1 tsp. Dijon Mustard
¾ c. Shredded Cheddar Cheese
5 slices Bacon, cooked and chopped
1/2 large onion, minced
In a medium pot, bring potatoes to a boil over high heat and reduce to medium, allowing to simmer until the potatoes are fork tender.
Drain and place in a bowl, Cool and the cut into 1/2 inch cubes. Immediately sprinkle with the packet of ranch dip and fold the potatoes over with a spatula until the dip mix is evenly distributed. Place into the fridge for approximately 30 minutes, or until the potatoes are cool.
While potatoes chill, fry and chop 5 slices of bacon and shred the cheddar cheese. In a large bowl, whisk together sour cream, mayo, pepper, garlic, mustard, and onion. When the potatoes are cool, pour into the bowl of sour cream mixture
Lastly, fold in the cheddar cheese and bacon. Sprinkle a few bacon pieces on top

Aw, this makes me wistful for the siblings I never had.
All the same, I enjoy 'borrowing' my friends' brothers and sisters - if only in my imagination. (Smile)
This recipe sounds like a neat twist on the everyday!
Great pictures of your sons and daugher, Ma! How cool to have a brother day like this! I might have to give my brother a call! Enjoy the birthday gathering! I do like to have a few meals ahead of time made to enjoy down time so to speak from cooking. This recipe for the potato salad sounds delicious!

It's so nice to read this... my sons were never close, and to this day, don't speak. It always broke my heart.
