Life is a Special Occasion!
Hallmark
May 15th is National Chocolate Chip Day. Chocolate chips are a great invention, and certainly deserve a little recognition. After all, where would chocolate chip cookies, cakes and muffins be without the chocolate chip?
Chocolate chips are popular in cooking and baking, for a wide variety of breads, cakes, and cookies. There is an almost endless number of recipes. They are also used in decorating. Have you ever had chocolate chip pancakes? How about chocolate chips in trail mix? If you've never had these, then you're leading a sheltered life.

THOUGHT FOR TODAY
As with most fine things, chocolate has its season. There is a simple memory aid that you can use to determine whether it is the correct time to order chocolate dishes: any month whose name contains the letter A, E, or U is the proper time for chocolate.

I’ve been trying to use a new recipe each week here at my house and I found a new way to use chocolate chips and my ever present too ripe bananas. I’m definitely going to be trying this recipe out
Banana Oatmeal Chocolate Chip Pecan Muffins
2 1/2 cups flour
1/4 cup whole-wheat flour
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup rolled oats
3/4 cup chocolate chips
1/2 cup chopped pecans
3 very ripe bananas, pureed
3/4 cup butter, melted
3/4 cup milk
1/2 cup firmly packed brown sugar
3 eggs, beaten
Preheat oven to 375 degrees F. Grease and flour a muffin pan. I always use the paper cupcake liners instead.
Combine flours, sugar, baking powder, soda and salt. Stir in oats, chocolate chips and nuts.
In another bowl, whisk together remaining ingredients. Add to dry ingredients until just combined. Do not overmix.
Pour batter into pan. Bake 25 to 30 minutes.
Don’t they sound good !
Here’s another recipe I’m going to try out very soon too
Deep Dish Salted Chocolate Chip Cookie Pie
serves 8
2 sticks unsalted butter, softened
1 cup brown sugar
1 cup granulated sugar
2 eggs
1 tsp vanilla
1 tsp baking soda
1 tsp sea salt, plus more for sprinkling
2 1/2 cups flour
2 cups semisweet chocolate chips
Preheat oven to 325 and grease a ten inch cast iron skillet with cooking spray.
Cream together the butter and the sugar until fluffy, then add the eggs one by one, beating after each addition. Add the vanilla and mix until incorporated.
In another bowl, whisk together the flour, salt and baking soda. Add to the butter and sugar and blend lightly. Add the chocolate chips.
Press the cookie dough down into your greased skillet evenly and smooth the top with your hand. Sprinkle additional sea salt over the top.
Bake for 45 minutes until very puffy and golden.
Let pie cool completely before cutting. Serve alone or with ice cream!
Have I mentioned that I do have a sweet tooth!
Thanks to the cooler days here I have enjoyed being able to turn the oven on. This weekend though we are to return to warmer temps so I’ll bake while I can. I don’t turn on the oven when it gets hot out.
I hope you all have a fantastic Friday !

That muffin recipe looks heavenly. I love chocolate chips but eat very little chocolate, in general. It is such a treat, though.
Have a blessed weekend.

That chocolate chip pie sounds like a real winner!
I like to prepare chocolate-based goodies for holidays and such ... only on account its one of the FEW foods I'm not particularly fond of, and I won't be tempted!
